Could not LIVE w/o the One Minute Muffin! I make the basic recipe minus any oil as I can't tell the difference with or without it. I add a splash of banana extract.
My favorite way to have it is with a smear of sf peanut butter or throw it in my Forman grill's waffle attachment. Love it as a waffle with butter and sf syrup! |

I LOVE this recipe! Thank you so much for sharing it!
I have made it the original way and also in the OMM thread on the recipe board, someone had a pizza crust recipe - OMG! That was delicious! VERY FILLING and YUMMY!! Be careful not to eat too much in one day, though...I had 1-1/2 yesterday and let's just say I was glad I was home when the moment struck. ![]() ![]() It's quite "cleansing" with all the flax meal.I'm planning to make up baggies of the dry ingredients, as you guys have suggested, and then I am bringing them on vacation. We stay at a place with mugs, fridge and microwave so viola - breakfast is set! ![]() ![]() |

So many great recipes on this thread! I love my OMM's!! I don't eat them everyday, but they are such a delicious alternative to the eggs I eat most mornings.

I finally made this yesterday - gag me on the flax!! Guess it's just not for me - threw the whole bag of flax away. Tried it again with almond meal and a tbsp of cocoa. Now that was good. But I forgot to squirt some whipped cream on top!

A great thread to revive! Last night we had breakfast for dinner and used the suggestion to make pancakes and they came out GREAT! I did half almond meal and half flax meal with CO, cinnamon, vanilla, splenda, baking powder, and a little salt. Then just added eggs until it was the right consistency. Put them on the griddle and they came out perfectly. Dh said they reminded him of buckwheat pancakes. So yummy

Here ya go! One Minute Flax Muffin 1/4 cup Flax Meal 1/2 teaspoon Baking Powder 1 packet Splenda 1 teaspoon Cinnamon 1 Egg 1 teaspoon butter Mix the dry ingredients in a large mug. Add egg and butter and mix well. Microwave for 1 minute. |

I tweak this to make a Flax Cake. I mix 1 egg, 2 TBLS flax, 1 Splenda packet, a tsp of vanilla, and a 1/2 tsp cinnamon. I fry in hot oil. They keep in the fridge and I just stick it in the toaster in the morning for brekkie. I count this as 9 carbs (but I round up on the vanilla and cinnamon and don't subtract fiber).
Top with butter, SF maple syrup, SF preserves, natural PB, cream cheese, fruit, whatever suit you! I have found that adding SF Torani syrup makes it a little to wet for my taste, but YMMV.

I haven't made these in a while -- I seem to cycle on them. I put a teaspoon of onion power in mine and skip the cinnamon. With cream cheese, it's my everything bagel substitute.
I've made sweet ones with daVinci syrups and egg white powder instead of fresh egg. I still haven't tried making a gingerbread flavored muffin. I meant to do that over Christmas. |

I've been doing low carb for years and I just tried my first OMM this morning.....WHY did I wait so long?! It was great....I made mine in a 4" round ramekin. I think I could probably use this for a hamburger bun too!

I actually LOVE these for burger buns. My favorite though is bacon egg and cheese morning sandwich.
One questions: I have been unsuccessful at finding ramekins. Any suggestions? I did notice that someone found some at walmart. Which sections? I really could use these! The OMM have not stalled my weight loss at all and I LOVE having them in the morning. |
