We will be having ham, steamed broccoli (loaded), and Scalloped Chayote/Cheddar casserole, plus tossed salad, and Asparagus if the quality of the asparagus is good when we go shopping Sat.

I will serve 15! We will have ham, mashed potatoes for everyone else but me, green beans sauted with bacon and garlic, green pear jello (sugar free of course) and a bright green leafy salad. Decided no one will miss rolls too. Dessert is strawberries with whipped cream or a gluten free carrot cake.

We are going to my dads

the Menu so far:
Appetizers:
I think I'll make some stuffed mushrooms
Deviled Eggs
Not sure what else yet need to talk to family

Dinner:
Ham I think we are having two a black forest and a spiral cut
Green Salad
Scalloped Potatoes for the carb eaters
Cauliflower casserole for me doubling because I'm sure others will eat
Rolls-for the carb eaters

There will be dessert because we are celebrating my kids birthdays that day with family, it wont be an issue for me. Oh someones post reminded me we might have mimosas and I'm sure there will be wine. I've had 1 glass of wine since starting this WOL, not sure if I will have 1 glass of wine or not..I might.

First time for us in 26 years with not one of our 3 kiddos at home at Easter...college, work and life gets in the way.

So for me, DH and whoever else we might adopt for the day:

Roasted or fried turkey
Cranberries
Cream cheese salad
Fresh green beans with caramelized onions
Savory mashed sweet potatoes

Fresh berry crumble (oatmeal and pecan topping) with whipped cream

Hi Rose…
I slice and parboil the Chayote for 15 minutes, and then build it just like Potato casseroles.

I make the sauce from 1 cup homemade really thick yogurt; and 2 raw eggs mixed together. If I need more sauce I increase it in ˝ cup-1 egg increments.

Sauce on the bottom, and thin sliced onions, bell peppers chopped, chayote and sharp cheddar. More sauce, more stuff - layers.

I do it more by look and feel but I build the sauce and cover the bottom of the baking dish, then begin layering and covering each layer of 'stuff' and then I bake it at 350°F for 45 minutes, and then uncover it till it sets, and then add more cheddar to the top and brown it.

It's cooking not baking.

I am serving 8 guests.
We will be having filet mignon on the grille (if it ever stops raining. If it doesn't I will prepare them on the Ark currently under construction)
Roasted Aparagus
Fresh buttered Broccoli
Wilted Spinach with ham and hb egg.
My non low carb guests are bringing (and taking all leftovers home) dinner rolls and scalloped potatoes.
For dessert I am going to fix individual small china plates of various berries, a square of Giardelli legal chocolate w/ a bit of heavy whipped cream (sweetened w/ a small amount of sf jello) as garnish w/ a sprig of mint. Maybe a tiny scoop or slice of marscapone ~ depends on how the plate looks.
I hope you have a blessed Easter and to our Jewish members I know today is Passover. G-d blesses us with friends and food and hope.

I also open my home to any/all with no one to spend holidays w/.
Sometimes we call our gatherings : "orphan holiday". No matter who comes it is odd that the blending is perfect for conversation and shared kindness.

The family will have a lot of carby options, of course: mashed potatoes, babka, pastries of all kinds.

But for me, there'll be ham, kielbasa, deviled eggs, and some sort of veggie options, like broccoli, green beans, and summer squash.

I am lucky, my grandmother takes us all out to a lunch buffet on Easter. I will be having salad, shrimp, smoked salmon, grilled vegetables with goat cheese, roast asparagus, lamb and prime rib. For dessert some strawberries and hopefully some dark chocolate if the Easter Bunny remembers to bring me some. I gave up chocolate for Lent and I am really looking foward to that chocolate.

Larry, your recipe sounds great. I will be trying that as soon as I make some of your yogurt.

DH wants roast goose. So we will have that. Mashed potatoes for him, and mashed celeriac root with butter for me. Deviled eggs, 7-layer salad, hot dinner rolls for him, and LC toasted hamburber buns for me, and LC strawberry cheesecake for dessert.

made me think of Persian spring lunch--feta cheese, lots of fresh herbs including parsley, cilantro, mint, others, walnuts, and olive oil. some salt. yum.

traditional cultures almost always eat a lot of the early spring growth, herbs and greens, to counteract the inevitable vitamin shortage that came over the winter without fresh vegetables. even though we are blessed today and don't have that problem, it is still a wonderful tradition!

Pat~this is been floating around on the LCF boards for years. I don't know who to credit it to (Margot maybe?) because I have it on an index card. It sure is good with cranberries and turkey, ham or baked chicken!


Cream Cheese Salad

1 cup liquid whipping cream (not whipped)
1 cup sour cream
3/4 cup Splenda (or whatever you want)
1 8oz cream cheese, softened
1/2 tsp vanilla
1/4 cup cold water
1 packet knox unflavored gelatin

Pour gelatin into 1/4 cup water, set aside so it can soften.

Heat cream and sour cream in medium pan. Do not boil, just warm it through.
Add vanilla and sweetener, stir well to dissolve sweetener.

Beat cream cheese until very smooth then add to warmed cream mixture.
Mix well and add the gelatin & water mixture. Stir thoroughly.

Pour into a bowl, individual serving dishes or a lightly oiled mold. Refrigerate until set.

My cousin is cooking but here's what's on the menu:

Ham
Deviled eggs
Green beans
Baked beans
Potato salad
Homemade cole slaw
Sweet potato something or other, whipped maybe?
Pickles/olives
Rolls

I'm going to skip the rolls & baked beans, I'll have to see what's in the cole slaw. I'll have to choose between a small serving of either potato salad or sweet potatoes and that will be my carb allotment for the day.

I'm hosting Easter lunch at my house for my family and my bf's family.
We are having deviled eggs and relish tray, slow cooker pot roast, turkey, roasted asparagus and cauliflower, strawberry spinach salad, and a low carb no bake cheesecake mousse with fresh berries. I might also buy some Lindt 85% dark chocolate for everyone to have a square. Decaf coffee, water and a little red wine for drinks.
I'm pretty lucky that my family and his family both try to eat low carb already, so no one is going to be complaining about the lack of potatoes and rolls!
