Pumpkin Seeds

Another post prompted me to get some roasted pumpkin seeds at Trader Joes yesterday. They are fantastic, but Im a little confused on how many carbs they have. Websites I've looked up have conflicting information about the shell or husk of the seed.

The nutritional on the bag I bought say that a serving is "1/4 cup edible" and says there are 4 grams of carbs, 2 grams of fiber.

Personally, I find the whole seed edible! But the way that's worded Im wondering if they are considering just the seed inside the husk? Which would effect not only the fiber content (Im sure there is more fiber if you're counting the husk) but also the serving size. Any thoughts?

What do you mean by Personally, I find the whole seed edible!

Im just curious, do you eat the husk and all? Some people even eat the skin of a kiwi fruit, so Im wondering if you could eat the husk too. I would just pulverize it in my Vita Mix if i chose to eat them.

Sorry it doesnt really answer your question.

My bag of pumpkin seeds says: 2 grams of carbohydrates and 2 grams of fiber per 1/4 cup. (And 10 grams of protein!) They have no shell, it's only the inside part. Looks like a giant sunflower seed.

If you have shells, and eat them, then I would think it would cause the fiber count to go up. Now I'm wondering if mine is labeled incorrectly.

Yes, I eat the whole seed. Like when you clean out a pumpkin at halloween and roast the seeds. Trader Joes also sells bags of just the inside, called Pepitas. I should have checked the nutritionals on that bag too..but didn't think about it.

Now Im really puzzled about the carb count!

I think these numbers are WAY too low!! Looking on MyFatSecret, I see

1 cup hulled 21.59 net carbs
1 cup WITH hulls 19.18 net carbs

so a quarter cup of the latter would be 4.8 grams net. that sounds more likely. no reason to think they would be that low.
