low carb ice cream

hi all! i am an ICE CREAM JUNKY!! is there any low carb ice cream out there besides breyers? i love breyers but have burned myself out on it. any help would be greatly appreciated! thx

The only type I have seen around here is Breyers. Just ate some myself last night. Paying dearly for it today though.:blush:

We love Breyer's and we like to make it from scratch as well.

Hi Kim…
A ⅔ cup of cream & ⅓ cup water per serving, an egg per serving.

Mix the cream-mixture and egg, sweeten to taste, add some vanilla, and freeze (we have a little counter top ice cream freezer).

Hi Kim, I'm not Larry...no, really.....but Linda Sue has some amazing ice cream recipes..Here is the basic one. Any of the DV syrups can be used.

1/4 Cup of Swerve (Erythritol and Olligosacchirides) or Powdered Erythritol (9.6 Calories; 48 T.Carbs * 95% Un-Metabolizeable Erythritol = 2.4 Net Carbs)
1/2 Tsp of Vanilla Extract
1/2 Tsp of Peppermint Extract
1.0z of Unsweetned Baker's Chocolate (ground into tiny tiny bits in processor - add in last 5 minutes of churning into ice cream) (140 Calories; 4 Net Carbs)

I'm making this tonight. Makes 4 half-cup servings with each at approx 55 Calories and 1.6 Net Carbs!!!

Are there better low carb ice creams these days? I remember having some back in 2001 or so, and it was... well... poop-tastic.

If you don't mind the long term side effects of Splenda/Aspartame/Ascelfame Potassium, and/or the short-term lax effects of Maltitol, then there are a couple commerical varieties out there.

Oh I like the LC choc...I put ice in the bottom of a tall glass, a scoop of choc..LC ice cream....then pour Zero Vanilla Coke or diet cherry Dr Pepper over the top...mmmm good...I dont have that every day but when I just have to have something extra sweet.....

Thanks, man. I just checked out my options at the supermarket, and they carry the Vanilla in cartons and the Vanilla-Chocolate bars.

I don't think I'll keep them around, but it's nice to have them for a special occasion.

Breyers is great but that container says there is 14 servings in it. That is hilarious if you know how much I adore icecream=)
So I don't buy it because it'd be more like 4 servings.

True. The serving size listed was 1/2 cup. I wish they had it in individual half-cup servings, like they do for Ben and Jerry's.

I loved their strawberry and the butter pecan....I wonder why they stopped making it? The butter pecan had a maple taste to it, very good!

has anyone tried the Safeway Lucerne choc fudge ice cream bars?..3 gm net carbs...yumm yummm!! loove them though not having them these days as i can't stop at 1..A box has 6 but i had gestational diabetes when i was preggers a few years ago and used to have them.. didn't affect my blood sugar...

breyers IS delish.

however, i wish they would make individual size portions. keeping 1/2 gallon containers in the freezer at home alone, is RISKY BUSINESS. I like your recipe, LJ. it seems very easy to do-TROLLPROOF!!! I will give it a try. Love & Profits: FLATFERENGHI

I like the Safeway low-carb ice cream, which I get here in PA at Genuardi's. Vanilla is 3 gms carbs per 1/2 cup and Butter Pecan is 4 gms per 1/2 cup. I usually have 1/4 cup, so for 1.5 or 2 carbs it's totally worth it. I think it tastes very good and the texture is like real ice cream. I haven't found any other flavors.

The only LC ice cream I have had is Braum's CarbWatch. It's sooooo good. I've bought maybe 3 gallons in almost 2 years. I don't eat it very often.

Braum's is only located in Texas, Oklahoma, Kansas, Arkansas, and Missouri though.

It's not straight up icecream but I bought a box of Kroger brand SF popsicles (24 ct)with the vanilla icecream in the center.
They have 1 carb each and they are surprisingly good!!
I only have one occasionally because there is sugar alcohols in it.

Thanks for posting this achevres. I didn't know Genuardi's had their own Safeway brand LC ice cream. I'll have to check my local store for it.

I love Breyers but I am so sensitive to sugar alcohols that it bothers my tummy too much. I bought an ice cream maker and tried all kinds of ice cream recipes. The ones where you just add cream, splenda and flavoring to the ice cream maker and turn it on just didn't do it for me. The custard style ice cream recipes tastes sooooo much better to me.

This is Alton Brown's recipe...I just replaced "sugar" with "splenda". My DH can't get enough of it!

Chocolate Ice Cream

* 1 1/2 ounces unsweetened cocoa powder, approximately 1/2 cup
* 3 cups half-and-half
* 1 cup heavy cream
* 8 large egg yolks
* 1/2 cup splenda
* 2 teaspoons pure vanilla extract

Directions

Place the cocoa powder along with 1 cup of the half-and-half into a medium saucepan over medium heat and whisk to combine. Add the remaining half-and-half and the heavy cream. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat.

In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the splenda and whisk to combine. Temper the cream mixture into the eggs and splenda by gradually adding small amounts, until about 1/3 of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40 degrees F or below.


Pour into an ice cream maker and process according to the manufacturer's directions. This should take approximately 25 to 35 minutes. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden.

I just saw that Costco has the Cuisinart ice cream maker for $29.99 right now -- I bought mine a while back for almost 50 bucks. So it's a great price. Plus, you can get it in plain white or fire engine red.

My ice cream maker is one of the most-used appliances in my kitchen. Some cream, some half-and-half (not that nasty fat-free kind, of course), sweetener of your choice, extract/flavoring of your choice, and egg yolks. Easy peasy. I get the pasteurized eggs, so I don't have to make a custard; it's eight thousand times easier.

Here's my recipe for fake Chunky Monkey from last year. Recently, I did a maple-pecan that was to die for.
