Carb /Calorie count for CHIA GEL?

Hi,

I'm hoping someone can help me figure out the carb/calorie counts for the chia gel that so many use.

1/3 cup whole chia seeds
2 cups water

(1 serving for me is 1 TB)

I'll wait for this info too. I've been reading about Chis seeds and ask DH to bring me some. You mentioned a lot here use it--guess I'll have to search past threads but for those of you who do use it--would you mind posting why and if it has helped you any?

Larry has some great ways to use it, maybe he knows the counts. I love to mix it in with low carb yogurt to make it stretch, also it really makes meatloaf moist. I read about it in the 70's, the aztecs used it for energy on their day long runs. I really like the crunch it gives things.

Just pulled my best espresso weighing scale out of the cupboard and fired up the USDA National Nutrient Database for Standard Reference and looked up Chia Seed by the ounce (dry weight).

Chia seeds weighed dry contain 1.7 net grams of carbs per ounce (28.35g), and ⅓ cup seeds weighs 47.3g (1.66 oz).

So a pint of gel contains 2.88 net grams of net carbohydrate. A quart of gel would be a total of 5.76 net carbs.

For those who use raw seeds in food or shakes, 1T would be ⅓ of 1.73 grams net carbs or 0.576 net grams of net carbohydrate.

USDA National Nutrient Database for Standard Reference lists 1 oz seed (28.35g)= 12.43 carbs with 10.7 grams of fiber.

That yeilds 1.73 net carbs per oz (28.35 grams) of Chia Seeds. Some pkgs I have seen label it as the same amount of fiber as carbs, but I trust the USDA database more.

I just got some chia seeds yesterday to try out, so I'm glad to find this thread.

I just want to make sure I follow this:

If I make my 2 cups of gel using 2 cups water and 1/3 cup chia seeds, that is 2.88g net carbs for the whole thing. Since there are 16 Tbls in a cup x 2 cups of gel, that means that there are 32 Tbls of gel. Take the total 2.88 and divide by 32, and I get 0.09g net carbs per Tbls. Right?

I'd have to use almost a whole cup in one day to count 1 carb. Sweet.

One site listed the calories as 66 for 2 tablespoons of seed, so 528 calories per cup... therefore 176 calories per 1/3 cup of seed.

If this seed pretty much just 'disappears' into the 2 cups of water, rather than adding to the quantity, and you are left with 2 cups of gel, that figures down to about 5.5 calories per tablespoon of gel.

Larry, remember when I asked you about thickening syrup? Do you think using the chia gel would work (if someone doesn't mind the seeds in the syrup)?

Hi Lucky…
Maybe - I thought about it, but it's a delicate balance with gelling substances because they are not neutral. They all affect texture, or taste or something.

It's an easy experiment...let us know if you decide to be brave and check it out...I like seeds (especially in berry flavors).

the nice thing is you can gel it as a lower ratio (like 10:1) and if it's not thick enough add a few more seeds and give it some time.

Works best to build gel solutions at room temp rather than boiling or chilled. I have added seeds and gel to soups in small quantities, and at the end while they are simmering.

And I have used seeds or gel in my shakes which are made with ice, but they don't react very quickly in cold solutions, and tend to clump in hot, so room temp is really easy and works nicely (plus I can stick a finger into it to test viscosity).

Let us know...

I have tried (not too successfully) to combine jello and chia. Wasn't the best...wasn't horrible, just not the best.

Scandalous...

Texture is akin to bubble tea, only smaller "bubbles." I use 1 heaping TBS in about 16 ounces crystal light lemonade. I love chia fresca, but also mix with fruit punch, orange, and any other flavors crystal light. You don't need a huge straw like bubble tea though, so that's a plus
I first started drinking chia fresca after reading Christopher McDougall's book "Born to Run," where he brings up the benefits of chia for runners, namely the ultra-long distance runners that inhabit Mexico. Been convinced of the benefits ever since!

Not really - but it's a fun drink (very popular in parts of Mexico made with lemonade).

Chia seed gel really 'likes' lemon and lime.
