OMG, liver and onions fried in bacon grease, I've got some out thawing in the sink right now. I guess once a week will not hurt the carb count.

Almost all of the foods that I wouln't eat as a kid, I now enjoy. Liver is the only exception that I can think of. I have re-tried it several times over the years and it just hasn't gotten any better. Makes no difference what kind or who cooks it.

Rinse and pat dry then saute some diced onion in butter, once they're soft add the chicken livers with some salt and pepper and cook (turn after 3-4 minutes) until they're no longer pink inside.
Eat them like that or puree the whole thing for a spread

Not a liver lover.

I read somewhere in my numerous Atkins books that you should limit organ meats to 4 oz per day. Has anyone else heard this and I wonder what the reason is?

I seem to remember reading something somewhere about not eating it or limiting it on VLC dieting. Don't remember why/where. Hidden carbs maybe? I haven't eaten any in a long time. Now, hungry for some.

I think liver has carbs because that's where the animal stores glycogen, which is a converted form of carbs.

see, I thought it didn't. and then something convinced me it was too carby. I posted same in a thread here and people disagreed, so I went looking again, and all the numbers I saw were basically zero.

I have some in the refrigerator, the chicken livers... I would hate to throw them out again!!!

I wonder why the data is so confusing? I guess the lives have varying amounts of glycogen, so the tests vary from one time to another? perhaps the chickens were low carbing? *bowing*

The USDA site says 100 grams* of beef liver has 3.89 carbs.

Chicken livers have only .73 carbs for 100 grams. (Maybe the chickens are low-carbers!).

(*100 grams = 3.5 oz.)

But I've never heard of any controversy about carbs in liver, except that people wish it didn't have any.....
