Hard lesson just learned!

Last night, my daughter made chocolate chip cookies to bring to school for her friends. It smelled sooooo good, she felt kind of bad. So tonight, she wanted to make me a low carb cookie. She made me some pecan cookies from the recipe board. (Used almond flour for the base) OHHHH MYYYY GOSSSHHHHH, were they ever good and she forgot to add a sweetener to them, but they still rocked. They were very small, and I thought I rememberd their carb count as being quite low. So over the course of time tonight, I ate 7 of those bad boys... YES I KNOW... SEVEN of them!! ACK. Then I put the ingredients in ****** and whoooooaaaaaaa, I just consumed 22 freakin carbs! I had some left over carbs for the day, but I try not to go over about 15-20 for the whole day. Sheesh on me, I should of known better! Will not be doing THAT again, and clearly, not ready for something like that!!

Awwwww, how sweet that your daughter would go to all of that trouble for you!! You must be a wonderful mom :-)

(And no worries, it's not like you filled up at the Cheesecake Factory or something!! Just a little low carb indulgence. I'd bet it made your daughter so happy to see you enjoy something she made especially for you!!)

She is a very sweet girl!!! and she was happy to make them for me! She was sad she forgot the sweetener, but I told her, they were still so good, and they were, daggonit!!!

She is trying to learn to cook, so she's pretty new at baking and was a little sad that in low carb, you can't really play around with the ingredients like you can with regular cookies. She didn't want to mess it up for me carb wise, I didn't tell her how many carbs I consumed! LOL.

You were dismayed to see the carb count, but you didn't want to rain on her parade so you kept quiet about that disappointing 'detail'. Oh I knew it, you ARE a wonderful mom!!!!

You are a good mom, and she is a sweet child. Next time she bakes low carb get out some baggies or small containers and freeze in single servings. That way you won't be so tempted to over indulge.

By the way, 22 carbs is not horrible. It won't hurt occasionally to have a few extra carbs. I actually lose better in the 30-40 carb range.

Hey, it was one day. No big deal. I think it is incredibly sweet of your daughter to make you cookies...reminds me of making cinnamon rolls for my mother She used to tell me I made them the best. I know now that isn't true but it became my "thing", LOL.

I cannot even eat oppsie rolls cause I polish off the whole batch in a binge frenzy. LC cookies would be the death of me.

That has happened to me before. I get too trusting that LC recipes are super LC and when I key it in it blows my mind. When I first started Atkins I used to make recipes but found that I was unable to control portions. It just tastes too good and its too easy to eat in multiple servings. Now I try not to make too many recipes and try to practice moderation no matter if it is lc or not.

I do have to say that it was super sweet of your daughter.

I find that there are some low-carb sweets that I can have and control the portions and stick to those. For example, flax muffins (I love them!) flax cookies, rhubarb sauce...and sometimes ice cream bars, Russell Stover candies or Nips coffee pieces.

Yes, I'm really not ready to have something like "cookies" around. They were a weakness for me before LC, so it's not a huge suprise that they are now! LOL.

Here is the modified recipe we used for Pecan Cookies: (makes 24 small cookies)

1-1/4 cup almond flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. cinnamon
1 egg
1 tsp. vanilla
7 Tblsp. butter
1 Tblsp. coconut oil (or any oil of choice)
4 oz. dark chocolate, chopped (I used 85% Lindt)
1 cup chopped pecans
1 cup Splenda (Didn't use this at all, but would of subbed Stevia here)

Combine dry ingredients, set aside. Melt and then cool butter, add oil. Set aside. Mix egg & vanilla in another bowl, set aside.

Chop chocolate and pecans. Add sweetner to butter/oil mixture and stir well. Now add egg mixture and whisk or stir briskly. Add dry mixture and mix well. Lastly, add chopped pecans and chocolate until incorporated. We lined baking sheet with non-stick foil and hand formed dough into small cookie shape.

Bake in pre-heated 350 degree oven for approx. 10 mins or until lightly browned.

Note: I needed to add considerably more almond flour, about another full cup or so, but I think my daughter didn't measure the right amount to begin with. So YMMV here. The cookies are nice and moist and a little crumbly! Original recipe said each cookie was 1.4 effective carbs, but I came up with almost 3 carbs each, unless I miscalculated!

22 carbs for a splurge seems quite fine. Imagine if they had been 7 regular cookies.

What a lovely daughter you have!

Rejoice in her thoughtfulness and ignore the carbs. Next time have her make a NON cookie recipe.
