Confused over rice paper/spring roll wrapper carbs

I found so much mixed info on the carbs on these. Does it vary by brand? Wouldn't think so but...
Both these recipes look great, but I don't want to consume 40g carbs unknowingly lol

Lemon Grass and Chicken Summer Rolls Recipe - Allrecipes.com (replacing sugar, etc with low-carb options)
and
The Healthy Recipe Finder - Tuna Rice-Paper Wrap says only 2g carbs per serving!

I looked at rice paper wrappers on one of my first LC shopping (and label-reading) trips and was surprised how carby they are for something that's barely there!

Here's what I found with a quick search today:
Calories in Rice Paper and Nutrition Facts
and
Calories in Rice Paper Wrapper - Nutrition Facts, and Healthy Alternatives | LIVESTRONG.COM
Looks like the lemongrass recipe is more accurate. Looks yummy, btw. I'd probably just serve it lettuce leaves and skip the rice wrap altogether, but I'm doing VLC.

The one I found was 3g per wrapper. And it was tiny! Like maybe 5" in diameter.

Some of the Spring roll wrappers sold in stores are made from standard flour, some actually from rice flour, but a video I saw mentioned soy spring roll wrappers that were lower carb. Not sure how easy they are to find as I have a difficult time locating any at all in my local stores

I wish they were LC because spring rolls are so yummy! I will have to check the label at my market next time I am there. Sounds too good to be true!

Yes, they make soy wraps, yes, I've used them once (ages ago), no I didn't like them. Don't recall the brand or where I found them, but probably at a nearby Korean grocery store I frequent. Frankly, I found them "tough", didn't like the taste at all. There wasn't a word of English on the package of the ones I bought, so I had NO IDEA how to use or cook them. So maybe I did it wrong. But they were pictured as thought they were not to be cooked. Maybe deep-frying like traditional Spring Rolls would have changed my mind on these, but I don't want to try them again to find that out. I tossed them out after trying to eat the first tough one one wrapped around some meat mixture for lunch one day. Google soy wraps and you'll get some info/hits.

Yes! Lots of Vietnamese dishes are served with piles of lettuce & herbs to wrap up, dip, and eat. Skipping the rice paper is totally do-able.

My Phillippine friend just made these yesterday for hubby and I. She is so sweet and knows I can't eat these but insists I try her new ones with bean sprouts...I hope to the good one above they were't too high in carbs lol!!!(And I wonder why I am at a stall the last few weeks) They are my weakness I will admit. Good thingI skipped lunch yesterday. They are just so dang yummy...
