Recipe idea just came to me!
I bought a box of those Atkins Caramel Double Chocolate Crunch Bars the other day and they are very good. Only 3 net carbs.
ANYWAY...these are very crunchy almost like a cookie inside. Wondering if they would make a good crust for some sort of a low carb pie!?! Put the bar in a food processor and make it into crumbs. Not sure what the filling would be, something low carb as well. I have a family picnic to go to later in the month and before Atkins I always made dessert. I may be able to make something delicious and low carb! Going to experiment this weekend. I love to cook and experiment. What do you think? |

I actually thought the same thing about those bars... I enjoyed them but was wondering what it would be like as a crust to a peanut butter cream pie?? Like you said, process the bars up into crumbs and line the pan... the filling could be made from some whipped up cream cheese, HWC, and some SF peanut butter (maybe 3-4 tbsp for the whole pie) and I even have some PB DaVinci's that would help the flavoring. Now I need to go to the store!!

Sounds like a good idea for a crust for a LC cheesecake. I love the Oh Yeah! brand chocolate wafer bars...they're very crispy.

Hmmmm...wasn't thinking about that. A box is like $6.00 and probably would only need 2 bars. When it comes to food I usually just buy what I need/want. I have been divorced for 8 years now and pretty much do what I want. I love it!!!
