I'm Up to Grains Rung!

And I have not decided what to really add besides Ezekiel.

I would like to experiment with whole grains like barley or wheat berries. Maybe a type of veggie/grain pilaf. I looked at organic whole wheat couscous but the carbs are crazy high (45 per serving) and I am pretty sure couscous is really highly processed.?

What would you add? I like the idea of cooking a whole grain, and have done a wheat berry pilaf in the past when I was veggie but want other ideas.

I have had MUCH better results climbing the ladder - I have always been very afraid! I am in virgin fat territory! I was so afraid - every time I tried in the past the few pounds of water weight made me so angry I instantly went back to VLC (10-15 carbs a day) but after the initial 3# water gain it started to come off quicker and I am down 11 pounds in the last month! (I have also lowered my fat to about 40-45% as I have raised my carbs). I am doing basically a good low GI diet.

I am amazed and thrilled here gang. My body definitely is responding better to climbing the ladder.

I am eating around 1800 cals a day and feel great.

Any grain suggestions for me?

Good for you! Yeah, I think so many are afraid to add new foods and play with carb levels so they stay stuck and that can lead to unhappiness with your food and, well, we all know how that goes.

I would caution you though that grains are HUGELY problematic for many, more so than any other "rung". Many opt not to even go there. I would definitely stick with sprouted grains and see how that goes then go from there. Maybe some buckwheat (Lauren has a nice buckwheat pancake recipe on her site.) Oats are the only other one I think is generally safe so maybe add a bit of oatmeal for breakfast or add some to an LC muffin recipe?

Yeah I came to a screeching halt with grains too. Thats ok cuz I was plenty happy with beans and fruit. Ive never been one to eat oats but maybe I will give them a try and see if those work for me.

I have buckwheat in the freezer from last year when I was doing raw. I used to sprout it.. I wonder if it will still sprout.

I will for sure proceed with caution on grains. I am very happy where I am now and won't mind having no grains if it comes to that.

Try making like a tabbouleh recipe, but use quinoa, instead. If you're super nervous, just use a little quinoa and slowly add more.

I LOVE quinoa and am looking forward to adding it back to my diet.

Quinoa:

Hailed as the "supergrain" of the future, quinoa could become tomorrow's rice, according to the current issue of the Culinary Trend Mapping Report, a quarterly journal of food and ingredient insight.

Published by market researcher Packaged Facts, in collaboration with the Center for Culinary Development, the report goes on to say that quinoa is higher in unsaturated fats and lower in carbs than most grains. I want to give Atkins rungs, in their entirety a good try. I do have a suspicion that I may not do well with all grains. I know corn is out for sure and I wonder about gluten.

I like to use very finely chopped cauliflower in with the quinoa to make a tabbouleh type salad. I can't do straight quinoa or grain of any kind so this is a nice way to stretch. God, I'd be so lost without cauliflower, lol.

Actually quinoa is a seed and not a grain. I have had it in a restaurant but have yet to make it at home. I should get some and give it a whirl!

Ah, right. Maybe that's why it's one of the few "grains" I seem to be able to tolerate then. Still packs too much of a carb punch for me but in small quantities I seem to be able to handle it.

I do ezekiel sprouted grain tortillas, oats, quinoia (tiny portions), and some sprinklings of corn sometimes 1/4 cup in a salad or vegetable/meat medley.

Ya.. I just bought some Ezekiel today. I believe it is gluten free?

How many carbs are in a slice? Also is it better to get the bread gluten free?

Ezekial is definitely NOT gluten free. They may make something that is but their sprouted grain bread is just that, sprouted grains.

I will caution you Cary with your IBD I personally don't think it's a good idea to add grains unless you absolutely know that your digestion is healed and free from inflammation.

On that note, should you decide to add grains I think it imperative that you soak them and in a bit of whey.

I found the Julian bread that has a low carb version. It's called the Smart Carb #1, and it's only one net carb per slice. The bakery is in La Jolla, CA, but you can order it online as well- just google it. I had one slice a day about 3 times a week, and I didn't see any stalls. It tastes like "normal" whole grain breads, so the flavor is there. I would toast it and put reduced-sugar peanut butter and a tiny bit of SF jelly. Sooo good! And one piece is enough- I didn't have any problems with portion control.

Hi Sweetheart!
I do the ezekiel tortilla and it IS gluten free. Don't do any breads they're too high carb. I don't go over 20g carbs a serving.
I'm hanging out now in the BFL 2010 v2.0 thread in the exercise part of the board... yeah thats right! I'm healed and now I'm obsessed with working out. Who woulda thunk it! Kudos to you girl you're gettin LIL!

No real grain suggestions for you Daisy -- as I have kinda backed down on the carbs a bit to get some more appetite suppression ... I use lowcarb bread products!

For a while I ate multigrain cheerios daily with breakfast and had no trouble at all with them ... maybe adding your grain at breakfast might be something to consider .. oatmeal, cheerios, "toast" etc.

I'm looking forward to eating toasted Ezekial bread again with natural peanut butter...they claim there is no flour ONLY sprouted grains with 12 net carbs per slice...gotta be one of the lowest GI breads around...oatmeal will be my other grain...lower GI on that as well...
