I miss French fries more than almost anything else. That and a nice Belvedere Vodka on the Rocks with Olives. But I don't miss them enough to cheat!

I am still tweaking the recipe! The first time I slapped a few things together and it came out great. The second time, not as wonderful.

Basically it is almost equal amounts coconut oil and peanut butter, with vanilla protein powder to bind it. I added heavy cream and additional sweetener until it was just right. A splash of vanilla essense helped.

My first mistake was not dissolving the sweetener before adding it, so things were a teensy bit crunchy. The texture was fudgey, leaning towards caramel-chewy.

The first time I made this it had a strikingly strong butterscotch flavour, but I've not been able to reproduce that again. Yet. I think I need to use less peanut butter. Orrrr.... maybe some Da Vinci's Caramel syrup instead of heavy cream and sweetener. Hmmm!


Edited to add: All of y'all who haven't figured out how to make low carb pizza -- you are all MISSING OUT! I do a base made of cheese with egg to bind, and it is freakin' amazing. I use Walden Farms Bruschetta thinned down with their 0 carb ketchup, then spread a barely-there layer on the crust. I'm not there for the crust or the sauce after all... I do pizza for the TOPPINGS!

Home made tortillas with melted butter.

Maribells mini tacos from the taco truck (real authentic Mexican tacos with corn tortillas).

I grew up here in Tx, I really miss my tortillas. I do have low carb ones occasionally though.

lol i used to love frito pie, and i do miss it, as well as real nachos (although i do allow myself mexican food once every few months and do enjoy fresh made chips)....

Pretty much anything I think I want, I can make in a new way. It's kind of become a fun challenge to me to come up with stuff and make it low carb.

But there is one thing....

One thing I haven't figured out how to make low carb and still be as good as the "real" stuff...

BEER!

I do have brewing supplies here and we have brewed some great ones, but I don't think there is a way to make anything that will taste good (I never drank stuff like Bud and Miller before and certainly am not going to start now) and not have a ton of carbs in it.

So, my birthday is this week, and that is the one treat I am allowing myself.

I chopped it up and added it to the magic bullet. Blended it up- took no time and it was so good! Once my mom comes with my divinici syrups I will add a little pump of chocolate syrup instead of sweetener.

and a large diet soda to wash it down.Of course, i will be coupling that with 3 or 4 Nathans Franks with mustard and kraut, no buns. there is no low carb sub for that(the fries), i am afraid. it is not just the food, but the milieu. It has to be the original at Coney Island, with the smell of the salt air. It is quite far removed from my neck of the woods,fortunately, and I do not anticipate being at Coney Island before Memorial Day Weekend of 2011. It will be, by that time, a controlled indulgence, after which I will be burning it off with exercise(probably a 4-8 hour walk)

I wonder if you could make your own with a little bit of sugar for the yeast and then sweetener? I used to make my own ginger beer- it's really easy. But I know the yeast needs the sugar- but I bet you could use less!

Did some research on it. I might have to try it although I don't really like Lagers or drink mass market beer but I've been known to drink a mass market import or two. Now if some craft brewer figures out how to make a low carb tripel or a low carb stout, I'd be all over that.

I cant have regular diet soda because of my high BP - so for me its Sprite zero, caffeine free diet coke, or diet mug or a&w rootbeer.

Hey, I'm in Texas too, and I know what you mean. My girlfriend is from Georgia and the last time she was here, she fell IN LOVE with homemade tortillas. She's mad that she can't get them in Georgia! lol

see I don't think of these on a daily basis- but if I were to go to Trinidad- I'm sure I would have a very hard time resisting roti, or channa an aloo ( curried potatoes and chick peas)
