Nitrate Free Bacon

Well I found nitrate free bacon at my local co-op... and is was very expensive... At half the size of regular bacon it cost three times more......
hmmm I will give it a try and if it is not the Filet Mignon of bacon I'm going back to my cheepy sodium free bacon :O

I had been buying nitrate free until someone here disclosed that the process used to make it nitrate free puts nitrates into it after all! I forget the details, but I did fact check it at the time and felt reasonably assured they were correct.

Dang!

Oh well, as I have long known anyway, you get huge amounts of nitrates from vegetables too... I would rather eat the nitrates and gain the adherence benefits of a flavorful LC Diet.

I wouldn't bother with it either. Nitrates used don't change the flavor or the quality of the meat it just helps keep the color and keep it from going bad as fast. It won't be like gourmet or anything.

and what Louis said also!

in addition there is some scientific, not gonna look for it now, study that shows how nitrites and nitrates are used by the body for certain protective processes, I believe in the stomach and some other parts. . . .Yeah, no reference on that! but I read it somewhere!

I think the supposed nitrate free ones use celery juice and celery powder which contain nitrates. It seems to be one of those fad type things where people like to say they are buying nitrate free, but they really aren't it's just from a different source. On the other hand people may know they are getting nitrates but prefer to get them from a more naturally occurring source ie the celery juice. I personally never went crazy out of my way to look for it, but recently they started carrying two brands at the local Hy-Vee. One was Oscar Mayer, the other was a more local brand I think; can't remember, threw away the wrapper. Neither were more expensive than the other bacons. Of the two, the smaller brand was better than the Oscar Mayer and I would buy it again. Another option is a place I order from online called Nueske's. It's a bit pricey, but is probably the best bacon I've ever had, and they use less nitrates than most commercial brands. If you like a smokey flavor, try them out. I get the slices but I also buy the whole slabs and cut the slices real thick, throw them on the grill and serve a la Peter Luger's Steak house for you NY'ers.

OH my I just tried Apple Gate Bacon, IT ROCKS!! nitrates or no nitrates it is worth the 6 something I paid for.....The best bacon I ever tasted...

Low sodium bacon is found frequently in the supermarkets.. I know Super Wal*Mart had a low sodium no sugar brand of their own....

OK, I couldn't stand it. Sugar or not I had to go get some today! The nutritional label states 0 sugars even though there is sugar added, so I'll just think about that!

I got the organic Sunday Bacon. Is that what you got? I guess I'm lucky. Mine was $4.15. (I will be using it sparingly)!

I think this is the article Louis was referring to. I did some more reading based on this info, and I now worry more about arugula and some of the other vegetables than I do about cured meats.

That's exactly it. I had already known that Nitrates were not as bad as they seemed, and that many veggies were high in nitrates, but I didn't know that "nitrate free" was such a meaningless term.

I just laughed at an ad for Oscar Mayer that had a big bold lettered claim, NO ADDED NITRITES/NITRATES

with tiny print

"except for what is in celery juice"

In other words, none added except what we added. BS!
