I use to do some version of a low carb cheesecake (it's been a while and I can't find it). Lately I've been mixing some cream cheese, SF vanilla davinci, and cinnamon and microwaving it until it's warm. Sometimes I add less than a teaspon of plain cocoa powder. It gives me just enough of a sweet treat.

I'm SO with you, Betty.

But if it's something sweet you're looking for, you want clouds.

1 pkt cream cheese
1 stick butter (melted)
1/2 cup splenda
1/4 cup dark choc cocoa powder

Mix well
spoon onto sheet in blob and freeze.

This is really the only artificial sweetener I eat.

The other day I made chocolate meringues by whipping 4 egg whites with 1/2 tsp of cream of tartar, and slowly adding about 3/4 cup of splenda and a few tablespoons of cocoa. Bake at 200 for 1 1/2- 2 hours, turn off the oven and let them sit in there for an hour or so more. A little time consuming, but they were a good craving fix for me

wenig.. Do you have any exact measurements for your coconut bark?

OR..do you just throw some CO in with splenda and cocoa??

As far as what I do for my sweet 'treat' I basically take whipped cream cheese and throw all SORTS of stuff in it like:

*pumpkin pie spice and splenda (topped with some ground flax)for a 'faux'' pumpkin pie
*cocoa and splenda for a chocolate fix
*any flavor of SF jello

YOu can also use RICOTTA instead of cream cheese.

MichelleM...I basically "throw" it together. I have to see it to make the right mix. 2 Tbsp coconut oil, 1 1/2 tsp cocoa powder ( baking kind) 1 tsp splenda....freeze the pan in first, take it out, put parchement paper on it, spread the mixture...Voila!

Loaded Cauliflower usually kills the craving for me. But I'm saving Paul's recipe for future reference.

Also - Lindt 85% if you like dark chocolate. The whole, very large bar, has 20 carbs, and one little square usually satisfies me completely - and I'm a total chocolate freak!

Generally speaking, I think it's better to make your sweet treat in a ONE PORTION size. Not sure most of us would do well with as much delicious chocolate stuff as Paul's recipe makes sitting there calling to us... LOL

I still think the answer is FROSTING.

if you want this to be chocolate, soften 1/8 oz unsweetened chocolate. this is one quarter of one half of those standard wrapped squares. more will make it a DARKER chocolate, if you like the increased bitterness, etc.

soften one ounce cream cheese.

start whisking in powdered erythritol. it will take a goodly amount and keep getting glossier and more frosting like.

add one DROP of vanilla or another flavoring. stir and taste before adding more. the cream cheese makes it taste really good and covering that up is a shame.

some people put butter in too, but I don't think it improves anything.

don't use flavored sugar free syrups, the liquid ruins the texture of the frosting.

eat it from the whisk, the spoon, the bowl. offer the last bit to someone else and enjoy their smile.

this smells awesome, but the butter doesn't want to mix with the cream cheese... maybe i shouldn't have melted the cream cheese in the microwave with the butter... oh well, i'm eathing it soon anyway!!

i'll definitely revisit these recipes for later, but i have to say the good thing about the clouds is i can only eat about two bites, then it's just too much for me. so that is definitely a good thing!

I find that butter melted in the microwave tastes funny whereas butter melted in a pan is delish.

Also, if you mix it too much, it gets runny. Just mix things together enough so that they are mixed and no more.

Give it another try. They really are worth it!
