Nut butters on celery is good and since he is higher carb he could also have them on apples. I keep sauteed chicken tenderloins in the fridge-luv to dip them in a mix of mayo & hot sauce. Tuna & sardines are also great protein sources if he likes them. Fage Greek yogurt is good as well as cottage cheese. One of my favorite snacks is Fage or cottage cheese w/sliced strawberries & raw almond slivers.

for some reason all I can think of to add is toasted pepperoni chips (I get the good deli pepperoni) and toast it in a hot oven for a nice crunch. This is one of Patrick's fav.
Also does he like olives? We really do.
I am sure you will get more ideas.

He could probably afford to get into some of the low carb bread products and wraps and things if grains are not an issue for him.
I like to make up a bunch of cheese crackers and will take them with me to eat with turkey or even spread with peanut butter. Jerky is great but it's hard to find it without sugar.

Sausage. I sausage. You can cook it, cut it, and put it on toothpicks with a cherry tomato or something for a little flair.
