Same here, and we drink raw goat milk. No problems. Also, I had a hen who collected her own fertile eggs for weeks in a nest before she sat on them. They all hatched out. Eggs are meant to last for a while, because a hen can only lay one a day, and I'm sure it would not be optimal for a hen to just hatch one or two eggs at a time. It takes 21 days of sitting to do it.

They don't keep as well as non-boiled eggs in my opinion. I would refrigerate those if keeping more than a day or two.

"Room temperature" may vary. In my house in the summer it can be as high as 90°. I don't think I would want to leave eggs on the counter...

I've always kept Easter eggs out for maybe two weeks.

Not to be the party pooper, but those 50+ year old people you can point to are just those that didn't die. Others did and so are not here to be counted. Ptomaine was a major cause of death for most of human history. Oddly, advances in sanitation correlates to increased numbers of people who live long enough to get cancer and heart disease.

ps: I know that Ptomaine is an obsolete concept, I just like the word. I mean "Food Poisoning".

Thank you, Lou.

I was about to have a seizure. My husband talks about his mother leaving fried chicken out overnight....yike.

I believe the conditions "back then" were better - hopefully not the factory farm of today, so possibly you'd be fine; but these days why take chances?

Oh, I got so sick I lost 15 pounds in 2 days (starting weight 170), I wanted to die. It was horrible. All from someone elses's egg.

What really freaks me out are the parents feeding raw eggs to their small children.

I remember by dad (born 1900) talking about Ptomaine poisoning...how sick he was. It left us a bit scared of getting it. Brings back memories of his smiling face...thanks Loowoo
This is great info on eggs, especially the put in the water technique.
Once I bought some free range eggs from the store, one was black when I cracked it open. They must have found it under a bush. The smell was absolutely horrific!!!! I couldn't go in the kitchen for hours, and it took a while for me to eat an egg again. From now on, in the water they go!

Well, we're also hyper about sterility and cleanliness here in America. Eggs cannot be left out once they've been washed, and almost all American eggs get washed before they're sold, so then they HAVE to be refrigerated. It takes off a layer of protection from germs from the egg when it's washed.

some of my favorite childhood memories are of eating cookie dough and cake batter (my husband is a raw cake batter fiend) ... dipping toastie soldiers into a soft boiled egg... we made egg-flips (basically an egg cream) at school in home-ec... no biggie.

True about old eggs popping up when old.

We were on vacation for 2 weeks. When we got back, I wanted to make some hard boiled eggs. Took the eggs from the fridge and put them in a pot. Filled the pot with cold water and immediately the eggs popped up. Amazing how fast they popped up. Never, ever before, has this happened to me.

Oh, Vegemite soldiers in soft-boiled eggs. That brings back memories. Actually DD occasionally asks for this - it transcends the generations .

Good one Minerva I leave out the butter and the eggs. I don't get them from a shop, but a neighbors farm. I just think the taste is so much better and so are the prices.
