Yummy and easy pancakes

So I decided to experiment and make some pancakes. I was browsing on Linda Sue's site the other day and I noticed pretty much all of her pancake recipes require cream cheese and I gain weight or just don't lose weight when I eat cream cheese (I think it's the dairy), so I got to thinking last night and decided I would take a stab at my own pancakes. It's probably more caloric dense that most people want, but it does make for a nice treat and for people who can't tolerate cream cheese.

Here's the recipe!

2 eggs
1/8 cup almond flour
1/8 cup flax seed
1 tablespoon heavy cream (or half/half)
1 packet Splenda
1 teaspoon baking powder
1 tablespoon SF vanilla syrup

Optional:
Butter
SF syrup

Nutritional count does NOT include butter and SF syrup. It would probably be around 350-400 calories depending on how much butter and SF syrup you use.

Calories: 330
Fat: 25.5g
Protein: 18g
Carbs: 9g - 5.5 fiber = 3.5 net g

I think I got the counts right. I have been known to mess up now and again.

I'm still gonna mess with it and see if I can't get the calorie count down.

Well the syrup I am talking about is the Torani/Da Vinci. But yeah, I guess it could be regular vanilla.

I've made something like this before in the past but used whey protein powder in the place of flax seeds and it helps to up the protein content a bit while lowering the calories a bit as well. Have you ever tried that? It tastes good

Have you ever tried making pancakes with coconut flour? They are to die for and there are several recipes all over the web.

I made some of these last week and I was full all day. I could never eat the regular pancakes because I would be hungry all day. Until last week, I probably hadn't had a pancake in over 35 years.

No I have not, but that's a good idea! How many calories does protein powder have? I haven't really used any since I've been low carbing.

I have not. I was going to get some last night when I was at the natural foods store, but it was like almost $8 for a bag, so I decided to wait til I get more money, but I will try that!

Flax seed, some ground walnuts, cinnamon, mixed with an egg and artificial sweetener if you like also make an awesome pancake!

I just came up with a very similar recipe the other night.
I used
2 egg whites
2TB almond flour
1 TB flax meal
1/4 tsp sweetener (splenda)
1 tsp vanilla syrup
1/4 tsp salt
1/2 tsp b. powder
1TB 1/2 & 1/2
splash of water if needed

I added a 1/2 serving about 12 blueberries which were big & plump so I cut them in half and dropped them ontop of the pancakes right after I put the batter on the griddle. YUMMY I used SF syrup didn't even need butter

Another option is to sub cottage cheese for the cream cheese (and blend it up well so there are no lumps)... I did that once when out of cream cheese and it worked just as well.

Start Date: January 19, 2002 -10 1/2 YEARS ON ATKINS
The ones I make are so easy, its incredible!

4 oz cream cheese, softened
4 tsp of splenda
4 eggs
dash of cinnamon

Combine all ingredients in a blender until smooth. Batter will be thin. Spoon onto heated griddle sprayed with non-stick spray. Makes approx 8 med/large pancakes. Serve with SF syrup. Smuckers is my fav.

This morning I made an awesome 5 carb pancake! I adjusted a recipe I found here (sorry, I don't recall where or who posted it), and made Chocolate Protein Pancakes.

1 pkg. Jay Robb Whey Protein - Chocolate
1 egg
2 tbsp flax meal
1/2 tsp baking powder
3 tbsp 1/2 & 1/2
dash of cinnamon

Mix it in a bowl and cook like a regular pancake (I used butter). It makes a big pancake, so if your flipping skills are like mine, you will want to make two smaller pancakes.

Topping for pancake:
Cut 1/2 cup of strawberries and put in a pan on the stove. Heat the strawberries up (stir a few times). Pour on top of pancake. Add a sprinkle of pecans and a dollop (about 2 tbsp) of Cool Whip (I use the regular. It's two carbs. The SF is 3 carbs. Go figure!).
