Is NOTHING sacred?!

So I'm at work today and I'm craving some little individual cups of chicken salad sold there. Because of LCFs, I'm a label nut now, so I decided to give it a peek. That seemingly innocent little cup of chicken salad was 17G OF CARBS WHAT?! I looked at the ingredients and sure enough, HFCS was in the top three ingredients.



I don't get it! What's so difficult about shredded chicken, mayo, and maybe a little S&P? HFCS has to get its dirty little fingers into EVERYTHING?! Luckily I had brought a burger patty with provolone instead, so I could put the offensive little thing back. Jeez! That, if anything, proves to me that EVERY label has to be read. Who woulda thunk?!

HFCS is one of many ingredients used as a preservative. Along with the high sodium content. Ugh! I would lose my appetite!

Would not surprise me if they used something like a miracle whip or better yet, "fat free" mayo, which are higher in carbs than regular mayo.

Because if you're eating chicken salad, you are watchng calories, so obviously, you would be watching fat as well... GRRRR.

At least you had a label to look at, right?

I've been trying to find Worcestershire Sauce without HFCS.

And then when they finally decide to make a product without it and just use plain sugar (which still isn't good) they charge more money.

It does suck! OP, I feel your anger.

Years ago, we had a grocery store in town that sold the BEST chicken salad. I set my sights on mimicing it, it was easy enough and so much cheaper then buying it for 5.99 a lb.

Cube up cold chicken (it is easier to cube cooked and cold)
celery
toasted almonds
green onions
and mayo.

Super easy, delicious, you can make a huge bowl that will keep for a week in the fridge for less then 5 dollars.

It is hearty enough to just eat with a fork and feel satisfied, and you do not miss the bread

Sugar retards spoilage, so they often put extra sugar into items that are intended to have a long shelf-life.

Ever notice how quickly things like "lite" breads get moldy? It's because there's no sugar in them.

I'm soooooo glad your a label reader, some people assume and you know where that leads. I make up chicken salad and freeze small bags of it for my wife's lunch. Works out very well! Here's the recipe.
Chicken Salad


-2 cups cooked cubed chicken
-1/2 cup chopped green onion
-1/2 cup chopped celery
-1/2 cup chopped cooked bacon
-1/2 cup shredded pepperjack cheese
-1 cup mayo
- sunflower seeds(nuts)

Mix everything except nuts, pack tightly in covered bowl and let get happy in fridge for at least an hour. Throw a few nuts on when you serve(they get too soggy if you leave them in)

This is making me want to make some chicken salad. I read a recipe with a few halved grapes in it as well as the mayo and nuts and I thought that looked yummy.

But if it is one of the first three ingredients it is not being used mainly as a preservative. Used as a preservative only there will be less used.

Wow unbelievable, that is why I try to eat as much at home/bring my own as possible. At least you had a label to consult, most of the time it is quite the guessing game.

This is one reason I've gone organic/whole foods. Even the foods that sound like good choices are contaminated with unhealthy ingredients.

Yes, they do. I avoid processed foods, even ones labeled organic. By using whole foods I avoid those things and can add my own healthy ingredients, like natural spices &/or stevia.

Even Organics and Locals are not safe from crap. I found out a Marinara sauce I liked made locally had vegetable oil it...Can we say Soy? Something I do not eat. For $11.00 a QT I want it with Olive Oil durn it. S'ok I'll make me own.

I know what you mean. That's why we read the labels and make more things from scratch. It's hard to find sauces/dressings that don't contain soy or another unhealthy vegetable oil.

I've been buying a few locally made sauces and spices from my Farmers Market. I'm making my own salad dressing. I'm feeling very good about the foods I am eating. Trying to find products containing only ingredients I am comfortable consuming can be very frustrating & it is really easier to make my own. I'm a lazy cook but I'm working on making that extra effort. I'm about to start making my own mayo because there are none made entirely with healthy oils in stores.

How do you make your own marinara sauce? I've seen recipes but they all had crap ingredients. Can you taste the olive oil in it?

How does it work out when you freeze the mayo? I've always heard that you can freeze almost anything BUT mayo?

By the way, your receip sounds delish! I am not a chicken salad fan, but I think your recipe may change that for me!
