Hot Legs

Chicken Legs
Frank's Hot Sauce

Preheat oven to 400 degrees.
Put chicken legs on non-stick foil on a cookie sheet.
Sprinkle the hot sauce all over both sides.
Bake for 25 minutes.
Add more hot sauce, flip, more hot sauce.
Bake another 15 minutes.

Serve with Blue Cheese Dressing (I like Marie's) and/or garlic butter (softened butter with a ton of garlic powder! Good thing I don't have a boyfriend, LOL!).

My other favorite is to use the above method, minus the hot sauce and sprinkle McCormick Low Sodium Montreal Chicken seasoning all over chicken legs. You don't need to add more when you flip them. I eat these a couple times week. So yummy!!!

New Twist on LC Pizza

Inspired by Kevin, Gary, NancyElle and others:

A six to eight inch individual LC pizza crust (depending upon how thin you prefer your crust):

Slightly less than 1/4 cup almond flour (Bob's Red Mill blanched recommended), fill to 1/4 cup with a dash of coconut flour (also Bob's).
1/2 cup part-skim mozzarella
1/4 cup mild cheddar
1 or 2 eggs

Combine and spread on on parchment paper paper sprayed with a a nonstick spray (I use an organic, olive oil nonstick spray).

BRUSH DOUGH WITH VIRGIN OLIVE OIL PRIOR TO BAKING! Bake crust at 350 or 375 for 20 minutes.

Remove and add sauce and toppings. (I use "Mom's Marinara Sauce").

Back in oven until baked to your desire.

I like soups. And soft boiled eggs, mashed and mixed with spices and sometimes a bit of butter. Cheese is good too. I also like faux mashed potatoes (from cauliflower), but I'm often too lazy to make this.

Personally I try to eat only when hungry though, not because it's raining or lightning. Raining especially can easily throw me into mindless eating... and where I live it rains a lot!

This is what I had at lunchtime today:

put 2 TBL sour cream in a bowl.
add 1 or 2 packets of splenda (to taste)
sprinkle cinnamon on top
stir then add:
1/2 cup frest BIG blueberries
YUMMY!

Yum This would be my choice, too. Or just hamburger gravy with the whipped cauliflower - we ate hamburger gravy at least once a week when I was growing up.

I also love faux potato/macaroni salad made with cauliflower - macaroni salad was a major comfort food, and the cauliflower version is really just as delicious. It's all the fixin's that make it so good .
