I accidentally tried a new "baby" vegetable!

Just got back from visiting my parents in OKLA and my mom has tons of veggie plants. There is a rogue squash plant that is growing from some random seed, and we saw the first squash and decided to eat it. It looked like a pale green yellow squash, if you know what I mean. We steamed it and ate it with butter, salt, and pepper and it was divine! Mom and I are freaks for yellow squash, and this was even better!

We went out a few days later and there were 2 much larger squashes, so we cut them up into half circles and steamed them-tho this time the skin was much tougher and not edible.

The flesh was starting to fall apart and get stringy....d'oh, it's spagetti squash! I would never have tried the baby veggie if I'd known it was spagetti squash, but if you've got these planted, try eating a few of the babies. They are so creamy and flavorful before they mature-with no strands. We picked it when it was the size of a medium zuchini.

I love baby vegetables. I think that I just like the size, lol, but they are delicious regardless of size. I love squash. Just this past week I had the hughest zucchinis ever. Each were a few pounds and at least 2 feet long. So good roasted in the oven w/some oilve oil and garlic. Yumyum.

I eat way more veggies if I grew them... even squash. I'm still coddling a squash plant through a horrible heatwave "down" here.

I'm already planning my fall garden. YUM.

You 2 are inspiring me! I think I should plant at least 1 squash plant and see if I don't kill it! (I did not inherit my mom's vibrantly green thumb. )

That sounds so good! I love summer squash. I've never had spaghetti squash. I'll look for it next time I go to the store
