JICAMA IS AMAZINGGGGGG!!!!!!!!!!!!!!!!
AHHHHHHHHHHHHHHHH!!!!!!!!!!! I tried them raw and they were okay with lemon and salt, but when I grated them and cooked them...OMGGGGGGGGGGGGGG, they were so DELICIOUS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! !!!!!!! When I was cooking them, my bf's grandmother was looking at me like I was crazy, but I had her try some and about an hour later, she came by the room and asked for the recipe.

I was in my boyfriend's kitchen so I didn't want to go snooping everywhere for anything, THUS...I just grated it and cooked it without anything just to see what it would taste like.
I found that they were really soft (I was reading old forums and people said they couldn't get them soft but that was not the case with mine), the cooking process brought out the sweetness in them, and took out all traces of the gritty fibrous taste that I encountered when eating them raw. Lots of recipes on the recipe forum, I can't wait to try frying them when I get back. Luckily I live in a heavily hispanic area, so all the markets carry jicama. |

I like mine sliced thin with fresh sqeezed lime juice and a little sea salt.
