Is there such a thing as LC Fettucini Alfredo?
I made some tonight....Hamburger Helper kind, not scratch...lol. It smelled SO good. Is there a LC way to make this? I thought about just making it a normal.....but not adding in the pasta (just have the chicken and the sauce) but I couldnt find any info on how many carbs were in the sauce alone.
I LOVE Fettucini ALfredo and would really like to be able to have the flavor from time to time. I have been searching for some type of "casserolie" dish to make that is very low carb....preferably with chicken and a sauce (cheese or whatever) but I need an additional 'filler' in there I think. I thought about using the Fetta sauce on the chicken and then using chopped celery as a filler for a casserole.

My highest weight was 315 lbs in February 2009, when I began to do LC. I began strict LC on April 6th 2009. On Sept. 05, 2009 I weighed in at 267 lbs - my lowest in 9 years. I have now slipped and put some weight back on.....so here I go....once again. Update: In sticking with it, I finally dropped below my Sept 5th, 2009 weight of 267 lbs on Sept 3rd, 2012. Almost 3 years to the day I'm finally back to 265 and nothing is going to stand in my way this time. I feel better than ever! |

I just use zucchini as my fettuccini in fet alfredo. I use my peeler to cut it into long pieces. It's tasty. I love it.
I usually just buy bottled alfredo sauce, but you can also make your own. Its pretty low carb. |

From the Food Network:
Alfredo Sauce: * 1 pint heavy cream * 1/2 cup (1 stick) unsalted butter, softened * 1 cup freshly grated Parmigiano-Reggiano * Freshly cracked black pepper * Chopped fresh flat-leaf parsley, for garnish To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately. ------ In the past when I've made alfredo sauce, I've also added in a bit of cream cheese. It really helps make it yummier.

Well-
You can always try Shiritaki noodles. I think they are made from soy flour and tofu, and they are definitely low carb. They come in a package with some kind of brine, which you drain off. Then you have to thoroughly rinse them, and then parboil them or nuke them to get rid of the "authentic" aroma. If you can get past the texture (a little spongy), they are a very good substitute for noodles. I've made alfredo with them Here is a link to the brand I tried: Hungry Girl |

With zucchini, people usually julienne it or create long, flat pieces with a vegetable peeler. With spaghetti squash, it comes out in long spaghetti-like strands after you cook it! They're both very tasty!

I use a gadget called a Spirooli--it cuts zucchini (and other veggies) into angel-hair-like long strands. Saute for a few minutes with garlic and oil and it twirls just like pasta! I like to mix in some shiratake or miracle noodles with the zucchini angel hair for a substantial meal. The spirooli has several different blades to make different types of veggie garnishes--it's really terrific. There are plastic ones available at various places online in the $30-$40 range. There's also a more substantial spiral slicer called a Benreiner in the $75+ range--I bought the cheaper one just in case I didn't like it and figured I'd upgrade to the Benreiner someday, but my plastic Spirooli is still going strong after two or three years of steady use.

I just buy Ragu Alfredo Sauce in the jar, cook up some chicken strips, add broccoli and pour the alfredo sauce over the top and serve. It tastes just like the real thing and I never miss the pasta. Quick and easy meal and the whole family loves it!

I use Dreamfields Pasta. Use per serving quantities only. Everyone seems to not be sure of this pasta, but I have lost 20 lbs on it! I love it and don't know what I would do without it. I even make low carb speghetti and shrimp alfredo, ect....gotta love it!

I make the chicken alfredo recipe (minus the spinach) in the recipe room. I make roasted green beans or cauliflower to accomany it and to have something else to smother in all the delicious alfredo sauce.

You can also put the alfredo sauce over steamed cabbage. Slice thin and break into strips, then steam it.
Local restaurants in our area make "Crazy Alfredo" which is alfredo sauce with slices of sausage, chicken breast, backon, and red pepper stirred in. For most any recipe that calls for pasta, I have good luck substituting cabbage. It's not strong enough to really identify (kind of like pasta). I sub broccoli for potato, lettuce for bread, cabbage for pasta, cauliflower for rice - works for me!

That just made my mouth water so bad. I also used to buy the Ragu Alfredo sauce and it was yummy. I also loved the cheesy alfredo sauce. That was THE stuff.

I made homemade Alfredo sauce the other night for the first time and I loved it! I'll still use the jar sauce for some things but the homemade with chicken and spaghetti squash was fantastic!
