Frozen eggs

So if I put things on the top shelve of my refridgerator, most things will become frozen. So last night I accidently set some eggs up there and this morning they were frozen. It seems like there was a discussion on here at one time that they are no good once frozen in the shell. Was just wiondering if they are still ok to use raw in my egg cream?

I saw an egg storage chart that says if accidentally frozen in the shell, use immediately after thawing. The yolks don't freeze well. They might not have the same texture.

I'd think they'd actually enhance an egg cream, so you wouldn't need to use as much ice. But use them today!

Thanks for posting this. My fridge does the same thing and I just bought a large case (like 5 dozen) eggs and they froze on me. >_<

Isn't that frustrating. I try to put things up there that doesn't matter if it freezes but sometimes things get moved around and I forget. I guess we will be eating allot of egg creams if they need to be used today. I froze a dozen.

You know my brother in law worked for an chicken/egg company for 25 years and said you do not actually have to refrigerate your eggs.

he also told us when we started using raw egg in our egg creams that if you wash the shell with soap and water you don't have to worry about salmonella, apparently it's actually on the shell.

You DO have to refrigerate store bought eggs, because those have been washed - which removes a natural membrane that keeps microbes from entering the egg via the shell. Other countries and rural areas have eggs taken eggs directly from the source and don't put them through the process of "cleaning" them which means they still have that protective seal and can just be left on the counter. If you buy the eggs that say something like "ok for eating raw cookie dough" they are ok. These eggs have been irradiated in order to kill off potential microbes like Salmonella, (which is why they are ok to eat raw, like in cookie dough) therefore storing them at room temp should be ok.
