Help me invent a "cookie"

I'm trying to think up a cookie or muffin type thing using steel cut oats. My teen son loves them and they keep him full until lunch at school, but they take so long to cook.

I've been making big batches and warming up a bowl in the morning, but if I could devise a grab-and-go concoction that would be great.

I'm guessing they would need to be cooked first since they aren't rolled thin like regular oats. I remember my grandma saving cold oatmeal after breakfast and frying it into patties later, maybe I could do that???

He's lactose intolerant so butter and cream are out. But he likes almond milk and I have a new jar of CO on the way. I use one of the less gacky margarines for him too. He's not too picky and like nuts and cranberries in the oats.

Any ideas??

Cook it up and pour it into a buttered loaf pan. Chill thoroughly, like overnight.

Next day, you can cut it into "sticks" - and either fry them up in a little butter, or eat them as-is, maybe with a schmear of PB on them, or roll them in some crushed almonds or other nuts - you can add dried unsweetened cranberries to the oats before putting in the loaf pan, or nuts, or a mixture of cinnamon and sweetener - lots of possibilities!

Or instead of a loaf pan, use a silicone muffin pan, divide evenly amongst the cups, refrigerate, then just pop them out and put in a ziploc in the fridge and he can "grab and go" - you can stir some PB into the hot oatmeal to give it a nice flavor, or some SF maple syrup (not too much or it won't set up firm) or a little SF jam in a flavor he likes.

Just for starters!

Oh my gosh those are some great ideas! I think I'll be trying it with some peanut butter stirred in very soon!!

Charski you're a genius!

I made a pot of oats, when it was done added a scoop of egg protein powder, a little DaVincis and melted a good sized scoop of peanut butter in it. I put it in silicon muffin tins and its in the fridge now.

I tasted some still warm and it was yummy.

Next we try cranberry pecan.

No reason not to try savory too - diced ham, or crumbled bacon, or browned sausage, crumbled - add to the oatmeal, mold and chill!

Gina, I make my protein bread/muffins with steel cut oats, and I keep them in the frig in Tupperware all week. I slice and wrap each piece individually, then store in frig. That way you can grab a slice and go.

PROTEIN MUFFINS/BREAD

4 egg whites (I use 3 egg whites and one whole egg)
1/2 cup steel cut oats
1 tsp baking powder
1 tsp cinnamon
1 scoop vanilla protein powder
1-2 T favorite s/f Davinci flavor
2 T Splenda
1-2 oz of chopped apple w/skin (optional)
1 oz chopped toasted almonds (optional)
dash of salt

Stir well, pour in muffin tins or papers sprayed with Pam. Bake at 375 for 20 mins, or until done. I get 7 muffins with this recipe. I've also poured it into a WELL-GREASED loaf pan for "protein bread."

Oooo, that sounds good too.

I'm going to have to get to the egg farm. I'm planning on making a big batch of Betty's "pancakes" this weekend too.

Four dozen might get us through next week.
