Start Date: 8/3/07 reinducted for 3rd and last time.
Before I left home this morning I largely diced up some left over pears and apples we have that are on the verge of going bad. I threw them in a crock pot with a little bit of water, cinnamon, nutmeg, and some raw honey I bought In ohio.

I hope it ends up a edible chunky apple pear sauce? I pack my youngest sons lunch and he has been asking for something different.

Fingers crossed it comes out edible !

We bought a mini pumkin that I want to hollow out and fill with something good as a kitchen project with my younest 2 this weekend. Any suggestions?

Oh man! I am a rice pudding FANATIC. I miss that stuff, too! Just a couple of weeks ago there was a riced cauliflower thread and two people said they made rice pudding and it was great. Also, Linda Sue has a recipe using full fat cottage cheese. I have yet to try either out of fear of portion control lol. But yum!

The apple/pear sauce was a big hit! DD9 was a happy boy.

Last night I was contemplating what to do for dinner that was quick ( been very hectic with DH gone and I was tired). I had some left over chicken breast. So I took the skillet pizza idea and remade it to a skillet chicken quesidilla dish.

Put salsa in a non stick skillet sprayed well with non stick spray.

Covered well with queso cheese. cooked just till cheese started to bubble and the start of brown on bubble tips.

I took out of oven added shredded chicken and a little more cheese, cooked just till melted.

I served with sour cream, diced tomatoes, little bit of shredded lettuce and some extra salsa. DD likes black olives so I sliced a few for her.

You can tweek it to your preference but it was a big hit with the kid's.

This is such a great thread! It makes me happy to know that I'm not the only one who's feeding their kids against the grain. So often I feel like the odd man out. I know though that these are the years that are building blocks for the rest of their lives, so I'll push the good stuff while they still listen to me.

I know it's working, and they're so healthy & happy! Me too.

Another egg success with the kids tonight. Dh is working late and so I didnt' cook big. we had eggs and sausage. The kids usually won't touch and egg unless they're forced!
I browned some Jimmy Dean in a pan and broke it up really small,, blended cream cheese and eggs in the magic bullet and scrambled it all together. I dropped DD's in a tortilla and DS's on a plate and told them it was "Sausage Suprise"! They kept asking what the suprise was... I told them when they were finished! That's eggs twice this week- yahoo!

All these great success stories, here is my disaster! Yesterday, we went out with the grandparents for lunch and all Andrew ate was won ton soup and dessert. Just great. Then, he had about 2 bites of dinner. I see him 10 minutes after dinner walk by with a candy bar in his hand! I was like "freeze mister!" Candy is not self serve, especially after not eating dinner. I took his dinner back out, heated it up, and he ate that, so not a total loss, but just not a great day. Frickin halloween, so much candy around! I try to keep Andrew as long carb as possible, but I am flexible on it, however candy? I hate candy!

Thanks to an ingenious idea to put spinach in an egg cream.. I came up with this.

I might called it Scrambled Sam I Am

1 egg
1/2 cup loose baby organic spinach
1tb coconut milk
smidge of salt

blend well in magic bullet and scramble in loads of butter. it tastes JUST like scrambled eggs.

My older 2 DD's are at Gramma's but I am going to make them these tomorrow...

You know, ham really bugs me!

It is near impossible to buy a plain ham that is not a black forest, honey or maple ham or to have corn syrup, sugar or smoke flavor added... and when they DO have the plain old country style hams they sell out quickly leaving the other crap.

You would THINK they would catch on and maybe order more of them?? I love ham!

Apparently they're over-run with boars in Germany. I wonder how one of those would taste?? My husband actually went hunting for one up in the U.P of Michigan. I bet they taste better than pork!

Kris I have a colleauge who hunts boar in the hills above Lake Sonoma and if it's dressed properly and immediately, it's wonderful tasting.

Thank you for " Bumping" Hezzie.

Their are so many questions about moving our children into a lower carb lifestyle, I feel this is a thread that should stay alive for info/ questions.


One of the big things in my house is getting more veggies in my kids. Since I started transitioning my family at a stage where my children already were set in their ways with taste preferences, it is something of a challenge for me.

Last week after reading how prozak added spinich for a egg creation , I had a idea.

The kid's love smoothies so I made a strawberry, blueberry, vanilla one and added some spinich in. First thing the kid's asked was why was it green ! So, being that it is halloween I told them that I added food coloring to make it look like slime LOL They loved the idea, and drank it down with out a word.

I am going to eventually tell them what I did but I want them to get use to the idea first. For now it did the trick.

NursieStacie...that's how I've been getting enough green leafy veggies down my two year old the last few months. He'll still eat brocolli, but other green things he's starting to turn away. So sometimes 3-4/week I'll do the berries/spinach (sometimes kale, sometimes swiss chard) smoothie, and even throw in some avocado! It's really good, but yeah, looks weird! He thinks it's a great treat! Anthing to get it in, right!? lol

I've done something similar - Lindsey does not like broccoli but she loves sweet potatoes. I could put anything with sweet potatoes and she'd eat it. So, she has a bowl of orange stuff with green bits and pieces. Over time, I'll increase the green as a percentage. She'll still continue to get her healthy sweet potatoes, but she'll also get her greens in.

I was sneeky again tonight.

Pureed a bit of bell peppers, onion, garlic clove, and a fresh tomatoe and mived it in with my ground beef for hamburgers.

Some pickles and lettuce on top. Opend faced on whole grain buns I get from a local bakery ( no perservatives) and kid's were happy campers. My Dh did eat her sans bun but boys still want the bottom so, I'm happy with the compromise.

No one even asked for a snack after dinner tonight and it is already almost 8:30 , so I'm pleased.

I have been trying to find more info on this. My girls are eating 90% whole foods and just had their two year check up.... they are perfectly healthy and on track. Despite my inlaws protest that they "have to have" icecream treats, candy (HATE THAT!), and nuggets and fries. Also, my kids only drink water...to the disgust and horror of my MIL. However, they eat all veggies and moderate amounts of fruit. They get plenty of calcium from cheeses, full fat yogurts and nuts. This woe has also cut down on the yeast infections that the girls get.
