What food(s) have you discovered while eating LC?
Like, foods that you would never have eaten before?
Admittedly, I was never a real big fan of veggies, but I am now a HUGE fan of zucchini (never had 'em before in my entire life until a month or two ago). I used to be only so-so on bell peppers and onions, now I eat those in everything. And canned pumpkin used to be, for me, just the stuff that went into pumpkin pie. ![]() I just finished off some leftover zucchini and thought about how funny it is that I polished that stuff off in no time... zucchini is delicious, and I never knew it til this year. ![]() |

I agree that zucchini is one that I never messed with before but I get it all the time now from the salad bar at Ruby Tuesday. Guacamole is one that really shocked me... I LOVE it now and never would even touch it in the past...

Avocados, and most vegetables. I knew they existed before, but not what I could do with them. Cauliflower mashed potatoes (fauxtatoes) are something everyone could benefit from. Egg creams I never would have had off of LC either.

Oooh yes. However, I think that freshly made guacamole is about 100000X better than store-bought or, like, Taco Bell guacamole... Mmmm... I should make some tonight.

I've always been a big veggie eater, so not much veggie wise is new to me except the caluiflower fauxtatoes (which are awesome!) The new things for me are Oopsie rolls and egg creams. I'm also amazed how much better everything tastes, and how I can actually look at the bowl of pasta my Mom had for dinner at the local restaurant and say "That looks great, and I don't want any!"

Foods that I have discovered since low carbing
pumpkin flax meal avocado coconut oil--couldn't imagine myself years ago sipping oil!!! using nuts as a nut flour (pecan, macadamia nut, almond) 85% chocolate bars I am sure I can go on but those are all for now! |

DH doesn't like avocado so if I'm just making it for me I'll do it with half and avocado and bits and pieces of everything else to taste. If you're in a rush you can just do one with avocado, lime juice, sea salt, garlic and cilantro/coriander which is good too. I hope you enjoy it! ![]()

![]() Growing up we always had corn or green beans from a can with dinner. Now I eat tons and tons of fresh veggies at almost every meal and I love them! ![]() ETA: and fresh herbs too! What IS quinoa and what DO you do with it? I've seen it at the store/heard of it in passing, but have no clue what it's for...

quinoa - pronounced "keen-wa" is a whole grain that has a high proportion of protein and a very complete form of dietary protein. I can't eat it while I'm trying to stay in ketosis but I plan to eat it like a pilaf occasionally when I get to maintenance.

Kudos to my mom, who always fed my family a wide variety of veggies. I grew up eating spinach, broccoli, cauliflower, bell peppers, bok choy, zucchini, etc. So there aren't really any veggies that are new to me.
But things that I've "discovered" since LCing: Flax meal Coconut oil Macadamia nuts!! (Was always too afraid to eat them in the past because of the FAT, LOL!) Full-fat cottage cheese (4%, large curd, YUM) Full-fat salad dressings (Blue cheese especially) DaVinci syrups GG Bran crispbreads Hi-Lo cereal Protein powders Beef jerky (Never, *ever* would have gone near it before. Don't know why. I guess I considered it to be really scary, but that was specifically in reference to the "slim jim" types. The ones made from sliced beef are wonderful. Maybe I just prefer them because they look nicer?) |

Eating eggs daily. I never dreamed I would look forward to having eggs for breakfast seven days per week. In the past, I only at eggs for breakfast occasionally.
I am totally shocked to discover how much I like blue cheese dressing. ![]() Before doing lc, I had tasted it , and did not like it at all. Now, I make sure to have it in the fridge all the time. It is my dressing of choice for salad and I also enjoy using it as a sauce/dip for meat. I also discovered flax meal when I wanted to try a one minute muffin. |

turnips parsnips rutabaga pumpkin seeds tofu noodles liquid splenda avocado shakes (OMG! so good) unsweetened mangosteen juice unsweetened almond milk coconut oil protein powder powdered peanut butter davinci syrups (had to buy a wine rack for all the flavors i have!) almond flour carbquick sugar alcohol (never again) flavor drops (not so flavorful) that's all i can think of right now but i know there are a ton more. i love just about all of them except the turnips and rutabaga weren't my favorites. |

Hi all
- bacon (only eats them on holidays during the buffet breakfasts. It's almost a taboo, something forbidden, so sinful, IN THE PAST!) - Flaxseed (never heard of it only maybe vaguely about it containing plantbased omega 3 / 6- something like that!) - Cream cheese (except on bagels, haha. ) - Frying cheeses (halloumi) - would have thought them as weird in the past! - Cream of tartar (maybe cos don't do baking before LC either) - Mayonnaise (sounds so fattening to non-LC people!) - Splenda (only for diabetics?!)
