Any ideas on LC marinade for chicken?

I have a family pack of chicken legs that I want to bake today, and usually like them teriayki sesame style - but WAY too many carbs for that. Does anyone make a good, LC marinade?

Marinade

Ohhhh, I just made a great one last night. I dont measure but here you go.

Sesame Oil
coconut oil
Soy Sauce
garlic
ginger
Hot chilie oil if you have
Splenda
lime if you like

mix, taste and add whatever until you get the taste you like.

It came out GREAT!

One I used to do is equal parts soy sauce and vinegar with some slivered onion, and pepper. Soak them and grill them. this has a taste that always reminded me of teriyaki.

I marinate chicken in soy sauce and diet orange soda overnight is best for but even it you do it the morning off it tastes wicked good

I like to marinate them in plain ol' Italian dressing. Find a good all natural one if you can. I get a great one at Trader Joes that doesnt have any funny ingredients.

Here's one for your recipe files that's really yummy:

Ginger Chicken Marinade

¼ c. olive oil
¼ c. soy sauce
1 T. lemon juice
2 cloves of garlic, minced (or 2 t. powder)
1 small piece of ginger, minced (about 1”)
2 t. curry
1 t. cumin
1 t. oregano
1 t. black pepper

Mix together and pour over chicken in a covered bowl or ziplock bag and place in the fridge until ready to grill, turning as needed. Marinate at least 3 hours or overnight.

This is also good with pork.

Also, this one is, I believe, a Kraft recipe, and it's awesome! Not a marinade, but super easy: (Oh, and I can't remember the "name" of the recipe - I just call it Parmesan Crusted Chicken)...

Parmesan Crusted Chicken

1/2 c. grated Parmesan (the kind in the can)
1 packet dry Italian dressing seasoning

Whisk Parmesan and Italian dressing mix together in a shallow bowl. Moisten chicken with water and dip in Parmesan mixture to coat. Place in baking pan sprayed with cooking spray and bake at 350º until done. (Time varies depending on if you have bone-in or boneless chicken... probably anywhere from 1/2 hour to 1 1/2 hours).

Won't help you today, but look for a recently released line of packaged foods called Culinary Circle, and try the Mayan Fajita Marinade and Sauce. Low carb, high flavor. Spicy but not hot. The other marinades in the line are loaded with sugar. This one isn't.

Ok - I went to the store and got a few things I didn't have for this one - got home, all ready to get going - Oh my gosh...I'm out of SOY SAUCE??? Whaatt?? That stuff is ALWAYS in my fridge!!! *sigh* Ended up pouring greek dressing over the chicken. There's always next time

  • red wine or beer (even though I'm a teetotaler!)
  • sugar-free pineapple syrup & Brown Sugar Twin

Who needs marinade? I just toss my chicken breast in olive oil then sprinkle with liberal amount of Pappy's Seasoning and put on the bbq. My teenagers love it when I say I am bbq' chicken. Never any left overs the next day!! If you use the thin cut chicken breast it takes no time at all.

I am simple. I just use lemon juice, garlic and olive oil. Yum. If it's a whole bird I will stuff it with lemons and fresh herbs. Delicious.
