i dont understand why people always make the statement that veggies never made anyone fat and that those carbs don't count?
the atkins diet is based around counting carbohydrates, especially on induction, is it not? i havent seen any posts where someone freaks over 1g of extra vegetable carbs, but i do often see people early on who overdo the carbohydrates because they consider some foods as a free for all (vegetables) and wonder why they are not losing on induction. so i dont see how some people mock others for wanting to know accurate counts and counting everything. yes the calories of extra vegetables are minimal, but the carbohydrates can add up , and that is a problem, especially at the beginning, when you want to be in ketosis. HOWEVER, show me someone who says their salad is causing a stall, and I will show you someone whose *ranch dressing* *bacon bits* *cheese* and *avocado* are causing the stall. Not the lettuce. i wasnt refering to your posts.
i was kicked out of ketosis by vegetables and would get cravings from eating too many vegetables. some people are more sensitive than others. carbs still count. and no it wasnt the bacon, cheese,dressing, artificial sweeteners because as soon as i realized what was going on i started counting vegetables more precisely and started losing again. it makes a big difference for some people, esp at the very beginning. this is why i guess i am more sensitive to comments like these. no the extra carbs didnt cause real gain, but they were impeding weight loss and stopping ketosis. now that i am much further along i can eat more carbs and be okay, but when i was losing it was causing a problem. hehe you can even see the thread i started last april about too many vegetables causing me to get cravings and go off plan.

I'm sorry that vegetables made you go off plan. I would personally (YMMV) suspect that's kind of rare. I just don't think that the lowcarb world is littered with failed dieters who would have succeeded if only they'd taken their iceberg lettuce more seriously.

the funny thing is that it wasn't even iceberg lettuce, it was a mesclun mix with romaine, so i guess that is the problem food, and maybe i should stick to iceberg hehe. |

i am so craving iceberg lettuce with bacon and blue cheese dressing.. I have yet to find one in Australia which is the same as the ones I ate in the US, but I'm looking! |

Right. I never worry about any low carb veggie. I do better eating lots of veggies. If there's anything to watch out for too much of it's fat (ducks)...really it's 100 calories for a tablespoon. Lettuce is <1 calorie per tablespoon. Do the math. Yes there is a metabolic advantage eating low carb but it is only about 200-300 calories a day at most. Calories count for everyone...so please do not worry about eating too much lettuce.

To say Iceburg has no nutional value is wrong!!!
This is why you have to read all the info on these boards and decide what is best for you. Not all the info on here is going to be accurate A lot of it is opinions. |

I do not like romaine - bleh.....I hate the big fat vein that runs down it and the lettuce itself is just yucky tasting to me. Grainy tasting to me.
GIVE me iceberg any day! Hubby feels the same way. Keep your romaine and I'll keep my iceberg........every time! |

Of course iceberg has nutritive value; as with all foods, a variety is what we're after!
Seeing it grow in the fields around Monterey was practically a religious experience for me...I will never forget the lovely smell of fresh-grown iceberg lettuce. To think we can buy it in the store for a buck or so is truly a miracle. I must add a caveat - salad in general was ruined for me for too long after the 70's when salad was the mainstay of all diets. For years I could barely ack one down i had eaten so much damnable iceberg lettuce. Used to be, THAT was salad...now the variety we have is insane. I know by now we are far off the OP! But after induction, eat all greens that you can in a wide variety. |

My favorite salad is 1 cup of iceberg lettuce with 1/2 cup sliced cucumber, 1/2 cup chopped red or green peppers, one chopped green onion, mixed with my homemade ranch dressing. Once in a while I'll throw in a handful of spinach leaves too. I hope this isn't bad! LOL.

M's dressing:
1 part sour cream 5 parts mayonaise garlic powder to taste drop of green food coloring (not necessary) Thin with milk. I also add blue cheese to this recipe. I experiment with other spices and herbs to suit my whims. M |

Charski, unfortunately, by the time most people get iceberg into their locale, it is at least two weeks old - likely was harvested & trucked before it should have been. I had no idea it was so beautiful in the field.
I feel the same way about celery - same type of thing. I saw those Monterey workers stooping to chop it from its beautiful perch. That, too, is a gorgeous plant, very regal. The smell of it, fresh cut, still makes me swoon as I recall that. I swear the workers have to get some awesome nutrition by osmosis just touching it. Again, the 70's had wrecked my perceptions of simple food like celery and carrots. I eat them with a whole 'nuther appreciation. |

Yeah, you're right, and we are VERY spoiled here, living in the "Salad Bowl of the World" as it's billed. We have fresh stuff here year-round not to mention a couple of AWESOME Farmer's Markets year-round too. And of course what grows in my own yard.

I agree Char....we are so fortunate to have the many different lettuce options. I like to compliment mine with fresh herbs.
