As I understand it, the mother is the actual substance that helps to form the cider into the vinegar so that you could strain it out, put it in some new apple cider and leave it and it would form a new baby crock of vinegar! It's the change agent that transforms the cider into vinegar. So it's quite maternal in its activities, I suppose!

I have no idea why it is called "mother" though.
