Decadent Lunches
I pity my friends with their oh so common fries, cold pizzas and sandwiches with more bread than filling. Yesterday I sat down to lunch with smoked salmon rolled around cream cheese and a salad tomatoe on the side. It total only 241 calories, so rich and filling. Pure decadence!!

Oh isn't THAT the truth - as I sit with a plate full of cream cheese, pork rinds, and a tin of smoked oysters - yeah, I know, some folks might not think that's a decadent lunch but *I* sure do!

I went to Red Robin and had a lettuce-wrapped bacon guacamole burger! I loved every dang bite.

I have sushi joint in the vicinity of my office, and they deliver! They have something called "Creamy Salmon Delight", which is salmon, cream cheese and avocado wrapped in cucumber slices. OMG, so good. They also have a dish they call Dynamite, which is a mixture of seafood covered with a may-type sauce and baked under high heat (very rich because of the mayo sauce). Their list of "lower carb" foods is very long, and I can always find something decadent there!!!

Today while the boys in the office are eating sandwiches I'll be having my homemade slow-cooker chicken and mushroom casserole, made with fresh tarragon and double cream.

Well around 250 grams is what I used. 10 grams of fresh tarragon. 60mls of cream or a quarter cup. Seal the chicken in the frying pan. Soften the onion with the garlic in butter or olive oil over a low medium heat. Make up the stock cube (do you US folks call them buillion cubes?) with just enough hot water to get it to dissolve. Chop mushrooms if they are big ones, or leave whole if they are little button ones. You can put them in raw, or cook a little and drain off any excess liquid. Cut up the stalks of tarragon, or pull the leaves off to use and discard the stems. (I'm lazy, I just shredded them with the kitchen scissors!) Blender the canned tomatoes. I think this is the most important bit. It produces quite a thick liquid and will make the sauce thicker than if you just added chopped canned tomatos. This and the made up stock is all the liquid you will need. Add everything except the cream to the pot and cook on low for six hours. I don't add any salt, since the stock is salty. I did add some black pepper. About an hour before the end, add the cream. You need to use the heavy cream (or double cream we have) because if you want to thicken the sauce later you can so that by reducing it in a pan on the stove, so you don't want lighter cream that will curdle. If the sauce is a bit thin at the end, like I say, either reduce it, or use a low carb thickening agent. Hope this is useful!

It's a herb that's great with chicken or salmon especially.
I'm sort of getting into using fresh herbs. My local supermarket sells them in little 25 gram (1oz) packs for about 60p each. The difference between fresh and dried is huge! Since I make a meal plan I can just pick up something that's going to suit what I have planned that week and use it up over a few days. Can be as easy as just chucking a few leaves on an otherwise plain roast in the crockpot. Of course, there's always the home growing option, though I've never had a very green thumb. How hard can it be? |

I know it's kinda boring, but we always do salads around here for lunch. I
LC cause I get to load mine up with tons of steak or chicken, cheese, ranch dressing (the REAL stuff, not that watery fat-free junk ), almonds, bacon bits, avacado, etc, etc. I love it and I'm always full till I head home ![]() ![]() ![]() |

Pocahontas,
Mine are made with ground meat. I've never had one in a restaurant, this is just something I put together recently while playing in the kitchen. But boy are they good and to top it off quick and easy to make. |

I had a delicious roasted chicken breast with green beans, EVCO & EVO with garlic and salt. Followed by a tablespoon of delicious coconut cream. Yummmmmmm!
