OMG I could go on and on but here is my short list;

1. GCBC - still only halfway through but what a life-changing book!
2. oopsies, one minute muffins and egg creams
3. support at all times and knowing that I can pull through the stalls if I wait it out.

One Minute Muffin

Here you go

Take a large coffee mug and melt 1 or 2 tbls butter or coconut oil in microwave for about 20 seconds. Add 1/2 cup flaxseed meal and mix well-add 1 egg,1/2 tsp baking powder & sweetening of your choice-1 pkt Splenda or sf syrup-mix well. Nuke for about 1 min (my microwave takes 45 sec). It should still look a little bit wet not dry. Remove and clean your mug right away as the flaxmeal can harden up pretty well if you let it dry in there. Enjoy w/cream cheese or butter. You can add vanilla extract or other flavorings,cinnamon,pumpkin pie spice-I love sf hazelnut syrup in mine. I also make a savory one by adding parmesan or cheddar cheese and some garlic or onion powder-on the savory ones you need to reduce your Splenda to a pinch. I sometimes take this savory mix and spread in a pie plate or any plate to make a wrap or flatbread. I usually spray the plate or coffee mug with Pam and never have any problems with the muffin sticking. The carb count is 1.6 if you use a pkt of Splenda. I use Sweetzfree and this lowers the carb count to .6. The savory ones carb count will be different depending what you put in them. These travel well and I usually make one in the morning to have at work.

1 scoop (28 grms) protein powder (presweetened with Splenda)
1 cup water
Nuke for one minute, stir. Nuke for another minute.
Add: cream, sugar free syrup, nuts, berries, whatever you want.
You can also sprinkle ground flaxseed on a salad, mix it with eggs, mix it with burger, just about anything you eat can be "enhanced" with ground flaxseed.

Tom, here's a recipe for a One Minute Muffin. You'll never notice the flax--just the muffin-y goodness. This is the way I make the thing--there are endless versions and variations--invent your own.

One Minute Muffin

In a coffee mug, mix well:
1/4 cup ground flaxseed/wheat bran mixture (equal parts by weight--I keep this premixed in the freezer)
1 scoop (28 gms give or take) chocolate whey protein (presweetened, Sportpharma) (I use vanilla)
1 packet Splenda
1/4 tsp. baking powder
Cinnamon, pumpkin pie spice, allspice--to taste

Combine with:
1/2 TBS coconut oil (or oil of your choice)
1 egg
Microwave for one minute. Dump it on a plate and slice it into rounds. Shmear with cream cheese, nut butter, or topping of your choice.

I think this beats psyllium husks all to bits.

Everybody's got a variation on this one! I've always known this as the One Minute Muffin--'cause you only nuke it for one minute. Here's the recipe I use:

1/4 cup ground flaxseed/ wheat bran mixture (equal parts by weight)
1 packet Splenda
1/4 tsp. baking powder
Cinnamon to taste (and maybe a dash of pumpkin pie spice)
1 TBS coconut oil
1 egg
In a coffee mug:
Melt the coconut oil, stir in the egg and then add dry ingredients. Mix well, and nuke for one minute. It may come out a little soggy-looking, but dries quickly. Slice and shmear.

I keep the flaxseed/wheat bran mix in my freezer, to use for muffins and cereal. You can add a scoop of protein powder to the recipe above--I like chocolate. I often add chopped nuts.

While I'm at it, here's the cereal "recipe" such as it is:

2 scoops (about 1/2 cup) flaxseed/wheat bran mix
1 scoop (28 grm) presweetened vanilla whey protein powder
1 TBS coconut oil (optional)
1 cup water
Mix and nuke for one minute. Stir and nuke for another minute.
I like this with frozen berries, nuts, or SF syrup.

I'm pleased to get this much fiber in my menu from something I like to eat. Might be the cream cheese I like best.

My one minute muffin contains;

1/4 cup flaxseed meal
1 egg
1 tbsp butter or co
1 splenda
1/2 tsp baking powder
davinici flavor of choice (or no davincis and just cinnamon)

melt butter in coffee mug, add egg and beat a little with fork. add the rest of the ingredients, stir and microwave for one minute.

Great post,

My thanks to this forum is that I finally got off artificial sweeteners such as Aspartame, Splenda and Zero Coke. Since then my cravings for sweets is nil. My sweet treat is Berries which are among the healthiest foods on the planet!

Oh yes, thanks for all the posts on Fish Oil too!

My version of 1 m/m:
3 TBS almond meal
1 TBS flax meal
unsweetened coconut
chopped walnuts, pecans
berries
1 beaten egg
1 TBS coconut oil
dash coconut extract
SF Davinci's- usually raspberry
dash cinnamon

I add berries at the very end, just before I place in microwave. Mine cooks fine at highest level, 1 and a half minutes, I cook mine in a cereal bowl, sometimes I top with greek yogurt flavored with a bit of SF syrup.
