LC alternative to potato chips?

If there is one snack I have a real problem avoiding, it's potato chips. I am flat out addicted to them! Does anyone here have a low carb snack alternative to chips?

Honestly? I've not found one, and it was the most lingering of my addictions - tougher than sugar and caffeine to outlast. On occasion (usually around my "lady's days") I still hear their siren song. That b**ch!

Yep, pork rinds, and specifically the hot 'n spicy ones, are my favorite "crunch alternative" - especially during induction. Also jicama cut into potato-chip-like slices works pretty well!

Once you are in the upper rungs of OWL you might try Trader Joe's sweet potato chips or parsnip chips. We like them BETTER than regular potato chips. And their Joe's Lows Nacho Chips are good too.

Someone on here also has a method of tossing kale with olive oil and dehydrating it - then sprinkle with a little salt - haven't gotten around to trying that yet but I am gonna! You might do a search for it. The posters who have tried it say it's crunchy and delicious. Also induction-friendly!

Try putting a paper towel on a microwave safe plate and putting pepperoni slices around the rim of the plate. Microwave for a minute or two, depending on your microwave, but you want the pepperoni to be nice and crispy. Serve with a little sour cream. Wonderful! You won't miss potato chips at all!

I've used thick provolone cheese to make something similar to potato chips.

I just heat up a pan, toss a thick slice of provolone cheese in it, wait till it starts to bubble and then flip it over. You can keep doing this until you get the crispiness of potato chips.

Plain pork rinds are a good substitute.

When/if you can handle them, sweet potato chips are awesome. Ever since Fawn mentioned frying them, I have been making these: slice them into thin rounds, toss with coconut oil, being sure to coat each one on both sides, then broil them until crispy and sprinkle with sea salt. My whole family loves these.

MICROWAVE FRIED CHEESE -

So easy -
Just zap 0 carb american cheese slices on a non-stick surface for about 1 minute. Remove and let cool.
Then eat. Tastes nice and crunchy and of course, cheesey good.
Great alone, or as a vehicle for scooping up dip, salsa, etc...

You can also sprinkle herb or spices on them proir to zapping them.
This gives them a even more potato-chip-ish quality that is divine.

I love to sprinkle mine with garlic powder, italian herb spice and paresean cheese....gives it a little something extra....even my family loves these, and I have to fight them for my fair share when I make em....try it out !!!

PS - Pork Rhines are great too. But the sodium inthem makes me swell up the next day. Whereas these cheese-chips don't seem to do that.

Here's MY TWIST on cheese crisps. I love the taste of almonds and Swiss cheese together, so here's a new way to enjoy that blend:

Ingredients:

Swiss cheese, cut into long slices
Toasted/roasted almonds, chopped

Place the squares/cubes of Swiss cheese on parchment paper and nuke till slightly browned. Removed from nuker and spread a few chopped almonds on the cheese while still warm, then roll up the cheese and place seam-side down till cool.

Enjoy!

I love potato chips too, but I've settled for the cheese chips mentioned above and it's a great substitution. Also, if you're in the nut rung of Atkins you can make the almond crackers on Linda's site...out of this world!

I went to my farmers market today and I saw one of these, it was hugh have you ever seen a small one? I would like to try it but don't want to get a hugh thing in case I do not like it. What does it taste like?

Jicama is pretty mild and crunchy....kind of like a cross between a potato and an apple.....it gives great texture and crunch in salads and slaw, or you can cook em up.....but they DON'T get mushy no matter what you do, they still have crunch, so you can't mash them or anything like that.
