I know what you mean. I got so sick of eggs, I could scream. But I went to LC sites and found recipes and suggestions, and dove in.

Bacon -- several slices
Sausage -- several links or patties
Pecans (chopped or halves) and maybe some plain shredded coconut, bit of cream on top, with a shake or two of cinnamon (reminds you of granola)
Put 1/4 cup cream in your coffee and add SF syrup to taste. Hazelnut is a good choice. This can be very filling.
Oopsie rolls are great. Spread with butter, LC peanut butter, or other LC topping. (SF jam?)

There are all kinds of recipes for muffins made with the different LC bake mixes, or homemade protein bars made with the various protein powders. I have used a recipe for Flax Meal Muffins that tastes pretty good and is fluffy, not like lead.

My local diner has a "breakfast skillet" that I love. It consists of onions, peppers, cubed potatoes, slices of sausage links, and mushrooms, all sauteed up and put in a small casserole dish. Then this has 2 eggs scrambled and laid on top, then covered with sausage gravy, and sprinkled with cheese. I've made something similar, omitting the potatoes, of course! You could omit the sausage gravy and just sprinkle on the cheese. It's got eggs but isn't EGGY. When I eat this at the diner, I just pick out the potatoes.

That sounds awesome! Do you heat this?

Oops sorry for the tardy reply...I DEFINITELY heat it. I think it'd be gross cold. I haven't eaten it this summer for that very reason...too warm!

But very filling, a little sweet, and extremely tasty!

I don't ascribe to the 'breakfast must be this' lifestyle. If I want broccoli cheese soup for breakfast, I have broccoli cheese soup! I am spoiled rotten by Atkins, and I love it!
Cleo, could you share your recipe fpr broccoli cheese soup?

Me too please. I love broc cheese soup but I am soup-challenged if it doesn't involve a can opener.

Laura's Cauliflower and Breakfast Sausage Bake
*I used Banquet Maple sausage

1 box sausage (10 links)
2 frozen cauliflower (thawed) bags (40oz)
4 eggs
1/2c heavy cream
12 oz cheddar cheese

Bake at 350 for 30m.

I dished out a 1/2c ramikin (sp?) and I'm guestimating that it's 162 calories, 13g fat, 2g net carbs, 8g protein. I say guestimating because I'm not sure how many 1/2cs there are in the whole thing and cauliflower is so low in calories. The 1/2c may be 1/2 as much as above.

I know I sound stupid, but here's the deal. I put all the ingredients into Fitday and then do x (such as .06 or .12) for the serving size, but this was more a scoop, so measuring isn't accurate. I'll know better after I figure out, LOL, how many ramikins the dish can serve. Then I'll do better math and put this in the recipe section.
Laura, this sounds so good! How many servings does it make? Portion control might be a problem for me...

Thanks. I think I'll make it today! I've been looking for something to fill the corn chowder void in my life.

My current favorite breakfast is a bowl of "hot pecans". I take 2 oz of pecans in a bowl, top with 1-2 Tablespoons butter and microwave for 2:40; until the pecans are toasty/roasted. Sprinkle over 2 packs splenda, 1/4 t vanilla and a sprinkle of salt. I eat them with a spoon just like hot cereal.

If you're looking for a phenomenal chowder, there is also this. This one is my absolute favorite and super-easy to make as well.

Thank you, Cleo - it sounds so good I'm making it today, even though it's supposed to be 107 degrees! Do you have a carb count on this?

That one looks good too! I actually have access to fresh clams but I don't really know how to cook them. Would just adding them to the soup cook them enough or would I have to prepare them some way first (other than getting them out of the shell of course)?

Got a recipe for a gluten-free, low carb breadbowl in that bag of tricks?

The old Carl's Jr. breakfast bowls were good - maybe a little high in fat, but great for when time was short (always, in my case - I'm not good at mornings). Top a sausage patty with a scrambled egg, bacon bits and shredded cheddar cheese - it's good!

Who says you have to have breakfast food for breakfast? Anything will do. Today I had Shepherd's Pie for breakfast. Yum Yum.

Gina. I've never cooked clams, but that doesn't mean it can't be done! I use canned. LOL! (I am only so ambitious). I am working on bread as I climb the rungs. I'm a perfectionist, so unless I LURVE it, you'll never see it. I have some big bread ideas for the future.
