sweet potatoes?

omg i cut one into french fries last night it was awsome anyone else eat them? what else can i do with them besids bake?

I love them baked, skin and all, with plenty of butter - and as oven fries - but they're also good cut into small cubes and cooked in corned beef hash.

Another one we love is to cube up root veggies - I use sweet potatoes, turnips, rutabagas, and parsnips, and sometimes a butternut squash - toss with olive oil and some diced onion, throw into a foil-lined baking pan, sprinkle with a little garlic salt and roast at 375*, turning occasionally, until everything is starting to brown up a bit. It's really delicious!

better than white, But pretty far up the carb ladder isn't it?

I fry them in coconut oil and sprinkle with sea salt. while they are a bit carby, they are a nutritional power house and a nice addition to your pre-maintenance menu.

Yeah, I know all about the sweet potato value but 27 carbs a day isn't bad It really depends on how low your carb diet is.

Make an adjustment elsewhere in your menu, or somewhere else during the day, and you can still keep the total carbs for the day pretty low - besides, cooked up with some good coconut or olive oil helps mitigate the blood sugar issues AND sweet potatoes contain inulin, which also helps keep the blood sugar level.

"Carby" is a relative term, based on what plan you're following and what stage of your plan you're currently in.

For me, in maintenance, they work out great!

We make ours into french fries as well! we also make twice-baked yams, which are TDF. Yams are so much more healthy than standard potatoes, and are an outstanding addition to any meal.

One cup of yams provides nearly 40% of one's daily allowances of vitamin C and 22% vitamin B! That's a lot of vitamin punch in your lunch.

You bet I've been eating my way through. All those recipes. Someone has to taste them.

A typical day:

lasagna for breakfast, a chipless nachos plate for lunch, and enchiladas for dinner. (All 'legal') I'm not much of a dessert person, so if I want sweet, I'll make the waffles from oopsie batter.
