Coconut cream!!!!!
![]() Has anyone used this before? I discovered this today, next to the canned coconut milk. I first made an Almond Joy egg cream with it (and posted the recipe in the recipe section). I had read that if chilled, it could be whipped like cream. Since I had only used a small portion of what was in the can, I put the rest in a pyrex bowl to whip up later. I just came home and took a peek. It had turned into a cool-whip consistency, with no whipping whatsoever! I took a small spoonful...delicious! I'm already thinking up uses for this..in my coffee, on berries. I even might make a strawberry shortcake using a few oopsies torn up, some berries, maybe some strawberry s.f. syrup, and a dollop of coconut cream. I wonder if it can be frozen and somehow turn into an ice cream-like treat? I'll give it a whirl. The can said 3g of carbs per 1/2 c serving (or maybe it was 1/4 cup..can't remember now.)In the meantime, back to the Asian market tomorrow to stock up. ![]() |

I use it a lot (and yet not so much - I know that didn't make sense). I use it a lot of times in place of cream. I only tried whipping it one. I couldn't tell when it was whipped, and ended up with coconut "butter", Chocolate coconut butter at that, as I was trying to whip it with cocoa for something. I've forgotten now what. Think it was one of Kevin's recipies, but can't remember for sure now. I've never tried it again.
I have put it in my coffee, but I do still need a little cream also, as it doesn't lighten it enough for me. I put it in flaxmeal hot cereal. Sorry, can't even think what else right now. And I'd love more ideas also. I need to go look for your receipe.

Culture it with kefir grains and make a non-dairy sour cream. Mix it with hazelnut butter and chocolate for a creamy nutella-like nut butter. It's neat for special recipes or if you have an aversion to real cream.

There is a coconut cream from tropical traditions that is solid, just like the coconut oil, at room temp - I guess that one is different, because no way could you whip it.

Yes. This is different from coconut milk and the thicker one that Linda mentioned above.
The consistency is similar to cream in that you can shake it in the can, as it is a liquid. It turns semisolid when refrigerated though, unlike cream. It had almost a cool-whip texture. The color is similar too..kind of an off-white color. I hadn't seen it in any mainstream grocery store, even in their Asian section. You'll find the coco. milk, but usually not the cream. Since we're in San Francisco, the Asian stores around here are a dime a dozen. ![]() |

As another has said here, the coconut cream in a can like Kris got is more like coconut milk than the coconut cream concentrate that Tropical Traditions sells (tho they do sell a coconut cream in a can also). It is very similar to coconut milk, but the milk as a lot more water in it. This has a lot more "fat" or cream.
The coconut cream concentrate is quite a lot different. It is ground coconut with very little water content. Coconut cream & coconut cream concentrate can be very confusing. What I buy (milk & cream both) have no added sugars. You have to watch tho, as some brands do add sugar. Especially in the milk. |

I agree, it is confusing! I try to shop without our kids. It makes it easier to concentrate!
![]() When in doubt, shake the can. If you hear sloshing, it's what I bought. It's liquid at room temperature. The stuff I bought can apparently be "turned" into coconut milk by adding water to thin it out. Hope this helps..PM me if you have any questions. ![]() |

Oh this intrigues me. Is hazelnut butter easily found? I've never seen it (but then again I've never looked for it)

Hi! I got it at Ranch 99. Or is it 99 Ranch? I can never remember. We have one here in Dublin, but I think there may other locations as well.
LOVE that store. They also sell geoduck . Oh my goodness. You have to google it if you don't know what it is. I just stand in front of the tank and laugh. Last edited by Kris T. : 05-15-2008 at 02:44 PM. |

![]() You could also buy bulk hazelnuts and toast them and grind them... psh, too much work! They're just as expensive as the butter, anyways. About coconut cream--drain the clear liquid off of your chilled Thai Kitchen full fat coconut milk. The cream rises and separates in the fridge and turns into hard chunks at the top. I got a full cup of coconut cream after doing this, and then added kefir grains.
