I see this question come up a lot ~ so I gathered all of the informative posts that I've recently seen on the subject (many thanks to ALL of the Posters!) ~ here's a summary for anyone interested ~ enjoy!


Per this Post:
Question for those of you who use raw eggs in your shakes
You have a better chance of getting hit by lightning, than you do of getting a tainted raw egg, IF...IF...IF, you keep them cold. The danger comes from bringing them to room temperature (or into the temperature "danger zone"). For example, a Caesar salad that's made with coddled eggs is not as safe. As long as you are keeping them refrigerated, and using them while they're still cold, they will be fine.

HB's Favorite Breakfast ~ Egg Cream Frappuccino
Here's my Recipe. I find that I MUST add coconut oil AND protein powder or I just don't stay full on an EC as a meal replacement.

3 organic free-range/cage-free eggs (fresh!)
2 oz (1/4 cup) organic heavy whipping cream *
8 oz coffee ice cubes (brewed strong!) *
1 scoop Jay Robb's whey protein powder (chocolate or any flavor)
splash of Torani or DaVinci SF syrup (french vanilla or any flavor)
1-2 Tbsp organic extra virgin coconut oil (melted)

blend/froth eggs first; add cream and blend/froth again
(makes it fluffy!)
add the rest of the ingredients in the order above; add melted CO last.

* Sometimes I substitute Almond Breeze or Atkins Advantage Shake for the coffee/cream + you can use any SF syrup under the rainbow of flavors!

Thank you for putting this together! I've got my reading cut out for me this afternoon......I've been wanting to try the egg creams, but I'm having trouble getting past the whole raw egg thing. <getting my coffe and settling in for a good long read> Hopefully, this will help me get over it already and try them.

Since raw is such a perfect amino acid composition, just imagine what the microwave does to alter those proteins! yucky!

Try the egg cream in your cuppa joe in the AM, one egg and cream and whatever sweetener you like (blended well of course first) and it makes a delicious, creamy cup of coffee and you will NOT know the egg is in there.. it just tastes so.much.better.

Hummingbird11, thanks for the links on the raw eggs. However, I have a question. I started doing the egg creams several days ago and have been pleasantly surprised at how good they are and how the kill my hunger pangs. When I read the info on raw eggs, it stated that beating them or whipping them changes and somewhat destroys the molecular structure. I know there's no way I could eat them whole, but do you know if the structure is damaged enough so as not to impart nutrition? Thanks for any other info you can give me.

you can use it with hot fresh coffee this way.... that is how my Mom is drinking it because she does not like icy drinks.

put a little hot coffee in the egg mixture first to temper them.. so they do not cook up when you pour it in the hot stuff

I am not fawn, but I found this:

"If eggs are whipped, beaten or blended without raw milk, raw cream, or coconut cream, many of the enzymes are oxidised and lost"

of course the cream we are using is not raw (until i get my first jug of raw milk and raw cream this weekend WOOT!)..

But I will continue to assume they are better beaten and eaten raw, rather than cooked or not eaten at all!

I am going to have to be on the lookout for coconut cream now too

I completely agree with you!

I assume they are better beaten and eaten raw, rather than cooked or not eaten at all.

Lucky YOU! do you live near a farm or something? is it from cows or goats?

Yeah, I think you're probably right. I just contacted Davidsons - the company with whom our supermarket purchases pasteurized eggs. I asked them about the nutritional destruction of the pasteurization process, so hopefully they'll respond. I'll post if and when I hear from them.

LMAO @ effexor.. I was going to use the name Paxil, but after what i went through i don't ever want that word used around me again .. When i registered with Prozak I never really planned on posting so much and I sure hope it doesn't offend anyone (hence the spelling it is actually a play on another name I use elsewhere on the internet)

My MIL has a line on fresh raw milk and cream.... she sees them every Sunday at church and said that I am the 6th person this year to ask them about it! She only charges $3.50 for a 2 GALLON JUG!! can you believe it?? She said for years she has only kept the cream and gave the milk to her pigs.

i am starting my baby on raw milk in 6 weeks or so... and am switching my other 2 kids to it right away.

I personally think cooking eggs destroys the molecular structure more so than what whipping or combining can do.....and if any of you ladies are like me, a raw whole egg just wouldn't go nor stay down so as I say, pick yer poison!

USDA guidelines on using raw eggs


No one should eat foods containing raw eggs. This includes "health food" milk shakes made with raw eggs, Caesar salad, Hollandaise sauce, and any other foods like homemade mayonnaise, ice cream, or eggnog made from recipes in which the egg ingredients are not cooked.

I almost died from Salmonella a few years ago, and I am a normal, healthy woman. As a child, I saw my parents violently ill for months from salmonella as well.

Edit to add I wouldn't feed a raw egg product to a rapist.
Please, eating the raw egg is NOT worth it.

Not saying that it doesnt happen, of course it does, but once again NOT everyone is affected by it and everyone IS different. So to each thier own.

I've been eating raw eggs for years Heather. I just make sure they're free range and organically fed.

With all due respect the FDA doesn't get a whole lot of respect from me. I maintain healthy gut flora and again with clean whole organic foods do well.

I'm more afraid to eat in restaurants than becoming ill from the eggs. I don't know where others fingers have been.

I use Eggbeaters Original Egg Beaters: Egg Beaters Original raw in my shakes. Can't really taste it. Lower risk of salmonella with eggbeaters. Read this article: Egg Associated Salmonella, on MedicineNet.com


Here is a quote from close to the end of the article:

"Pasteurized eggs are available in test markets around the country for those who want to make, for example, a protein shake containing an uncooked egg or sunny-side-up eggs with a runny yolk. These eggs have been heated to 145 degrees Fahrenheit for three and a half minutes. Egg products in containers, such as Egg Beaters, are also pasteurized."

I used to gag at the thought of it but once you try it you have that "ahh hah" not so bad moment.

For me, pasteurization denatures the amino composition so I'm willing to take my chances. Rather than use conventional eggbeaters if I were afraid of the salmonella, I would temper my eggs......but I'm not.....I know where my eggs come from.

Some people are fine riding around without a seatbelt or smoking. They do it for years and years and never have a health problem.

What an adult does is their business, I just hope nobody's feeding raw eggs to their children.

I care too much - that's my curse. I wish I were an indifferent, apathetic person who didn't care. But I do.
