Coconut Flour Blueberry Muffins!!!!

I made these last nite in my ketosis energy haze and they're amazing! I think these are better than ones made with flour. The texture and taste of the coconut flour is far superior. My husband who has NO reason to LC loved them. I paired each with a dollop of Cream Cheese spread. I only had to use a bit to make it a real treat as these are so moist u don't need a lot vs. ones made with almond flour. I ate one just now as a snack and it was quite filling and satisfying. My only problem is how 'short' they seem in the 6 muffin tin. They turned out more like cute bites than full on huge muffins. I highly recommend u try these See recipe below:


hese muffins are made with coconut flour, which has a fairly mild coconut taste. They can be made with blueberries or raspberries. Because coconut flour isn't standard (I think the amount of moisture may vary somewhat), I tried to compensate for this with the amount of water. Also, in the nutritional information I used the average of the three most available coconut flours on the market, since coconut flour is not in the USDA database of foods.
Ingredients:
3 eggs (room temperature - important)
1/3 cup coconut flour
¼ cup melted butter
½ teaspoon vanilla
¼ teaspoon salt
¼ cup sugar substitute equivalent (liquid preferred)
½ teaspoon baking powder
2-5 tablespoons water (see below)
½ cup raspberries or blueberries
Preparation:
Heat oven to 375° F. Prepare pan with a generous amount of butter. This recipe makes six "regular"-sized muffins.
1) Whisk or beat the eggs until whites and yolks are well-mixed. Stream in the butter while continuing to whisk. Add salt and vanilla and mix until combined. If using liquid sweetener (preferred, as it is zero carb), add at this point.

2) Mix the remaining dry ingredients - coconut flour, baking soda, and sweetener if using powder.

3) Mix the dry and wet ingredients together. Now you will whisk in water, one tablespoon at a time. The coconut flour will absorb the liquid from the wet ingredients like crazy. You want to get it to a consistency that will hold up the berries, but not be too thick. I usually end up using about 4 tablespoons of water.

4) Gently mix in the berries and divide among 6 muffin cups. Bake for about 15-18 minutes, or until just turning golden on top.

Nutritional Information (using raspberries, zero carb sweetener, and an average of three available coconut flours): Each muffin has 2 grams effective carbohydrate plus 3.5 grams fiber, 4 grams protein, and 132 calories.

Maybe....

Mine where short cause I mixed the splenda into the egg mixture instead of the dry mix? I'm new to baking so I don't know how to make my stuff look as good as it tastes

OMG! That sounds SOOOOOOOO good!!!!! I love my flax muffins ... but a lower cal coconut muffin sounds divine too!!!!

Stupid question: Is coconut flour simply ground coconut??

p.s. kudengwu I love your exotic look in the photo! I can imagine you eating coconut muffins!!

Thanks I was on vacation in Mexico a while back--need to go again! Yeah coconut flour is the defatted ground up meat from the coconut. It's defatted organic coconut flour cause the oil/fat is drained off for EV organic coconut oil! I used Bob's Red Mill but am itching to try other varieties to see what's best. And I'm thinking a good alternate version would be to replace the butter with some EV organic coconut oil.

How do I get them to look 'taller'

I wish I had taken a pix last nite to show u what I mean. I will post the pic of how they looked on the site though and just say mine looked waaaay shorter.

Muffin Top

This recipe makes six "regular"-sized muffins.

That's what I did wrong. I used a 6 big muffin pan that I typically use for mini meatloaf It was waaay too big. They didn't puff up and get that nice round 'muffin top' that's so desireable on an actual muffin, on a stomach-not so much
