EAT YOUR VEGGIES!

I have seen so many posts from people asking why their weight loss has stalled or is zigzagging up and down. They post their menus and wala overloaded w/cheese, oopsie rolls (they contain cream cheese-moderation on Induction) & takeout food. The biggest thing that stands out is no healthy veggies. Dr. A called Atkins a controlled carb WOE not a no carb one. This is one of the reasons Atkins gets such a bad rap and is called nutritionally deficient. Please reread DANDR or whatever Atkins book you have and get reinspired to eat healthy and nourish your body while enjoying the added benefit of losing weight. Good luck to everyone!

You are so right. I had a friend that would only eat meats and cheeses. She ended up in the ER with severe constipation She ate no veggies whatsoever, now she blames Atkins for her stomach problems. I told her to read DANDR but she said she didn't need to

they will see me eating lettuce and be like, hey i thought you were on atkins! you dont eat lettuce on atkins! im like uh yeah ya do! and they swear they know better then i do

I know, I know! I'll be at work eating my chef salad. or a piece of leftover steak and someone will say, shame shame, thought you were on a diet? Isn't that too much fat? DUH!!!! It blows my mind, but they see me shedding the pounds, go figure!

For three weeks now I've done my meal planning and preparation in advance for the week, and doing that really helps me to make sure I get the veggies in, and spread through the day. Typical day this coming week:

B: 2 sossies and a piece of crustless quiche (and I like my quiche crammed with veggies.)
L: Cold chicken breast and a medly of steamed veggies with butter.
D: Pork "streaky slices" done on the George Foreman and more veggies, that I'll steam or saute as I fancy.

This week's veggies include: broc, leek, red onion, spring onion, sweetheart cabbage, courgette & mushrooms.

Do I get the seal of approval?

I'm not much of a cook, so I just like simple stuff, with minimal preparation. And I love my veggies.

I think that making and lugging a salad to lunch every day is a pain so I try and stick veggies in some of my favorite grab and go type recipes from the board. Like putting a layer of spinach in the bottom of the White Castle Pie, betcha zucchini would be tasteless in there too. I make my lasagna with Eggplant instead of low carb noodles- very tasty and ta-da- veggies. My newest old stand by, Pot Sticker Patties, has to be 50% cabbage. I also love Mousakka, it's made with eggplant. Maybe not as great as a fresh crispy salad but at least I sneak those suckers in!

Can I come to your house today? Your menu has great variety and this is what helps one from getting bored with this WOE and helps you learn how to eat for the long run. Darn now I want quiche...

Great post Lisa!! As I always say, in the absence of processed/frankenfoods, one can consume a lot more calories and still lose weight without fear of cravings.

Where oh where can I get that recipe for the pot stickers...and the moussaka ! I love me some moussaka! AND OF COURSE it must be said like (w/ emphasis) Mufasa! LOL from the Lion King! can you imagine I had a student last year insist I call him Mufasa??? WTH??? this was a 7th grader! I said "NO!"

Thanks for an important reminder. Looking back at my fitday from the past year, I loose best when I am eating tons of veggies. My carb counts can go up to the 50's for the day but I feel fantastic and I loose really well. One of the best things for me has been the recipes on this board and Linda Sue's sight. I never get bored - there is always something new to try.

It is SO easy to get those veggies in, too! I have worked really hard this time around to even assuage my inner not-wanting-veggie side.


Breakfast: Smack Your Mama Tex Mex Omelet
Lunch: Wendy's Caesar side salad (with that Oopsie + Baconator)
Dinner: Savory Chowder

Now I actually enjoy vegetables because they're so easy to incorporate without feeling like 'rabbit food'.

I've begun thinking "What veggie can I use to replace the pasta, potato or roll in this recipe?"

Usually it'll be something like cauliflower bits in a casserole, broccoli or zucchini as the base for a topping (think spaghetti or philly cheesteaks), cabbage noodles, french green beans or eggplant. After you re-train your mindset it's not that hard to make veggie substitute and it helps a ton w/ getting the veggies in and keeping the frankenfoods down.

Per Fitday, a cup of boiled, cubed rutabaga has 15 g carbs and 3 g of fiber. I've had great luck using them in place of mashed potatoes or diced potatoes in soups.

I LOVE vegetables and we are making sure that our 8 year-old son eats them too. As far as he is concerned, he doesn't like any veggies, but that they are good for him and are a necessity in his diet.

I eat a large spinach salad every day for lunch (spinach is my favorite) and last night my husband (who does all the cooking in our family) made eggplant, squash, zucchini and asparagus cooked in olive oil. OMG, they were so good - they were like dessert to me!
