Great Thread!! So many delicious ideas!!

Unfortunately, getting enough veggies is not a problem for me, actually, it is quite the opposite. I think it may be part of my issue with not losing very quickly. I am trying to stick to induction levels as far as carbs, but the problem may be that I am eating 2 cups of salad veggies + 1 cup of reg. veggies all at once with supper and maybe it is spiking an insulin response.

Any thoughts?

Too many carbs at one meal can spike some peoples insulin. Try to spread your carbs out over the day. Dr. speaks about this in DANDR.

I'm making a particular effort to spread my carbs over the day this week. Veggies in my scrambled egg or omelette, plus blackberries and yougurt for breakfast. Lunchtime carbs include veggies in the crustless quiche, a few cherry tomatoes, and some blueberries. No cream or anything on the blueberries I just eat them like sweeties! And dinner carbs are the veggies on the side, with plenty of butter, or those already included in the chilli I made at the weekend. Maybe a few nuts after dinner.

bumpity bump bump hoping more will share how they are using veggies in their meals . We have been eating out a lot this week soo salads and gr beans for me. Got a luncheon tmorrow and Thursday

A lot of the articles were lost or buried when they redid the atkins website... with expressed permission from Colette Heimowitz I saved nearly everything on the site to put on the Newbiesite I have in my signature... Here is a link to the article about eating veggies...

I love lettuce witha few tomatoes and cucumbers and, this might gross people out, mayo on it. I have a serving of salad like that almost daily. Sometimes a bit of onion if I am not too lazy.
