I've got my shopping in for the week.

This weeks veggies: peppers, onion, mushrooms, tomatoes, sprouts, fine beans, celery. Hmm, not a huge variety there. But plenty of them!

Man, just thinking of them is making me hungry.

If anyone is interested in some new and exciting veggie ideas, I'm going to post some good "raw" recipes in the recipe room this weekend some time. I'll let you know when they're up! These come in handy for summer especially but I think it's important to consume some if not most of your veggies raw.

Fawn, I have the weirdest thing going on, I have 6 sisters, and 3 of us get cripping pain when we eat certain things RAW - broccoli, squash, onion, scallion, broccoli, banana, pineapple to name few. It is getting worse for me, I used to just have horrific stomach pains and now, I can throw up or have other violent stomach upset.

VERRRRRRRRRY upsetting as I know how healthy RAW can be. I am too afraid to try the Fawn shake for his reason. I still dont know for sure all the veggies/fruits that effect me. Am considering going to an allergist to get tested for food allergies...

Just thought I'd bump the veggies thread!

I've made my plan for next week. Veggies for the week:
Onions, mushrooms, cherry tomatoes, celery, peppers, cauliflower, sprouts, broccoli.

AMEN TO THAT!!!

I could not have said it better than that. Also, try a different veggie every now and then. Different veggies have different nutrients and/or varying quantities of nutrients. Grill, saute, steam them, use different spices, herbs low carb sauces and dressings on them; anything to keep it interesting. I was using baby bok choy this week and will be trying broccoli di rape this evening with some grilled salmon filet. Love & Profits: FLATeat myveggiesFERENGHI (in town & in control)

I try to vary my veggies a bit each week, though onions and mushrooms will always be on there! Is it possible to cook without onions?

I did my stirfrys without them this week-but I did use just a bit of onion powder on my ground turkey or chicken.

Thanks for the reminder. I am pulling out of my rutt - only eating broccoli and cauliflower and some green beans makes one sick of veggies. I can't wait to go to the grocery tonight and stock up on fresh mushrooms, fresh cucumber, fresh zuchinni, fresh celery, fresh onion, fresh spinach, fresh green peppers - oh did I mention I will be buying everything FRESH! Trying hard to move away from the frozen and/or canned foods that clutter my pantry and freezer.

My sides and salads are going to ROCK

I got those Ziplock zip n steam bags. Yday part of my dinner was 1 cup of broccoli and cauli mixed, 1 cup of shredded cabbage, and 1 cup of squash & zucchini mixed, all topped with a dash of olive oil, dill weed and lemon pepper seasoning (trying to cut back on salt). It was SO GOOD!. 3 cups of veggies!!

What's worse is when I tell people that I'm eating lots of vegetables, salads, chicken, eggs, and cheese/cream/dairy in moderation, they say, "Exactly, you're not eating any carbs." Right, because the carbs in vegetables don't count. Silly me! I must have forgotten!

Yesterday I was arguing (well, bantering, not an actual row) about Atkins with the fellas at work and came out with "potatoes are for peasants". It kind of tickled me anyway. And I stand by it! Well, except for Jersey Royals.

Veggies next week: green beans, cauliflower, mushrooms (2 kinds), onions, sprouts, red pepper, tomato and garlic.

Have leftover brussel sprouts gonna finish up, when I feel better plan to get celery (been dipping it in everything) Got a bunch and cut it up small and put it in a glad container in the fridge so handy to grab a couple. Also plan on green beans, and peppers. Plan to reread part of this thread for more ideas.

hey lil miss, i have something similar, but not as severe. If I eat certain RAW veggies, like the cruciferous ones (broccoli, cauliflower, etc) as well as nuts, I get this horrible lump in my throat and it just makes me feel like I want to throw up. It is extremely uncomfortable and I try to drink tons of water to make it go away, but even drinking water at that point is really hard.

I have narrowed my problem down to gastroesophageal reflux disease (GERD), at least that's what i think it is

I have found that these foods cause NO problems though when the veggies are at least lightly steamed or the nuts are sprouted.

Great thread, Lisa!

Since LCing, I have come to rely upon and appreciate vegetables, like never before.

I am fond of cabbages of all sorts, now.

I especially Brussels sprouts.

And, I have been eating shredded cabbage w/carrots (Dole packaged coleslaw), as the base for my salads, instead of lettuce.

I find it nice and crunchy, filling and yummy!

I think we should all get advantage of this time of the year to grill the veggies. I think its a good alternative to frying or boiling them, just something different
