Hi, Jillian! Thanks so much for checking in and letting me know how they turned out for you! I am so glad your family loves them, too!

Isn't it something when non-LCers like these? Still, I was not sure how my kids would feel. Then I caught my hubby walking around and noshing on them! I was like, "You like those?" And he's like, "These are really good. What are they?" Then my kids started trying them and were loving them. Now I have to make a new batch of 12, 1-3 times a week depending on the menu!

I also tried using the Kitchenaid mixer this time and WOW. It was fast! while I used the handmixer to put together the yolk and the cream cheese, the kitchenaid helped me finish a few minutes more quickly! It was REALLY easy!

I appreciate you letting me know what you think of these! I hope they'll continue to work for your family. Mine is sold, and getting bread products out of the house (or cutting them down) is extremely not easy.

Another thing? I know I've mentioned this a few times, but these rolls rock as pizza crusts. Think of them like a slightly softer version of the english muffin pizza, or if you used a hamburger bun as a crust. Under the broiler with toppings for a couple of minutes, and you have a delicious treat even the kids will enjoy (and mine don't like home-made pizza generally).

Woohoo, locarb4me! I am so glad they turned out! I added a recipe at my blog that works really well with these. You can use them as Pitas, too!

Hi Cleo....remember me? One of your fellow Coloradoans? I was very impressed to see your article in the newspaper. I am always excited when low-carb receives positive press.

By the way, it is Saturday morning. I made my first batch of the Revoloopsie Rolls last night and they turned out perfectly! I LOVE THEM! It is so helpful to have something that is very, very close to bread (they remind me of a cross between a popover and a croissant) and so low in carbs. I ate most of my batch and didn't feel too guilty because I knew there were very few carbs. You're actually eating a lot of air! hah!

Made my non-low-carb husband a grilled cheese sandwich out of the last two buns as he was headed off to work this morning....will see what he thinks later.

My second batch just came out of the oven.....perfect again! They are so easy to make, cheap, filling, satisfying and almost no carbs. Yeah!!

You are officially my hero. Thanks so much for introducing these to everyone (including the general public via your column). You are a sweetheart!

I agree with Rory! Cleo, you are uber talented. But rather than write for the mags (which will pay you $3 for an entire piece and then own all rights to it...print and electronic!), maybe keep focusing on your blog and expand your audience.

I haven't made it through the whole thread, so this may have already been said, but you have to really, really beat the egg whites. Not just stiff, super stiff. When you think you've beaten them enough, beat them some more, and then a little more.

I just bought some crocs online. I got the Professional style and wear them at work. No one seems to notice/care. SWEET!

Guess what? I've got buns in the oven! I mean.. no no I'm not preggo. I'm making the rolls! 19 minutes left and I can smell them already!

For what it's worth, they work as grilled cheese sammiches. They're thinner like quesadillas, so I cut mine into triangles and dipped it into mah low-carb soupadoup!

If you are not a pro writer, you should be. I only read the first few posts of the thread and thought wow, this is a great writer. Skipped to the end. You are hilarious. I would think there would be a market for your talent and hey, you make people smile. That's worth a lot.

I write songs, I think I know a writer. You got it goin' on. It's quite rare.

Chocolate Chip Cookies

Yesterday, when I was at Wal-mart, I wondered if I could make chocolate chip Coopsies. These taste wonderful although they are more the texture of a choc chip muffin. Still delicious.





The extra carbs: 2 Squares 85% cocoa 4 carbs/1.5 fiber=2.5 net carbs.
1 TBS. Diabeti Sweet 12.9 carbs/12.6 Sugar Alcohols=net .3 carbs

I made 12 cookies so roughly .25 carb extra per Coopsie.

When I put these on the pan, they were nice and airy but deflated during baking.

Into the egg yolk, I mixed 1 Tbs. Brown Sugar Diabeti Sweet, 1 teasp. vanilla, and 2 Squares chocolate finely chopped.
