1 Minute Muffin
Hi,
Today I tried the 1 minute muffin, im on induction. It was great,a real treat. I felt like I was having a muffin from the bakery. Tasted so good, im on day 4 on induction. I hope that was okay to eat. Will I make my goal by my birthday????? Have a good day all. |

I also enjoy the minute muffin. I have it everyday with my bacon. It helps keep things goin', you know. I'm on induction, and I think it's okay, since all the ingredients are induction safe.
------------------------------------------------------------------------------ Serving Size: 1 1/4 cup flax meal 1/2 teaspoon baking powder 1 packet splenda packet 1 teaspoon cinnamon 1 large egg 1 teaspoon butter Put the dry ingredients in a coffee mug. Stir. Then add the egg and the butter. Mix. Microwave 1 minute (or more). Take out. slice, butter, eat. Cream cheese would go nicely, too. Notes: 11.1 total carbs, 8.8 fiber, for 2.3 net carbs. The shape of this can be changed by making it in a bowl. It can be "toasted" once it's cooked. The cinnamon can be replaced. I would imagine that any sugar free syrup could be added. Per serving: 235 Calories; 18g Fat (63% calories from fat); 12g Protein; 11g Carbohydrate; 223mg Cholesterol; 284mg Sodium

I made the one-minute muffin for the first time yesterday. I actually had to put it in for two minutes though

I like the 1 minute muffin. I've added nuts (not on induction though), used different sf flavored syrups (banana, raspberry, chocolate). Eaten it with cream cheese. Put butter on it. It's very good and very filling for that just needed snack.
I'm glad you enjoyed it. Good way to get in your fiber too! |

I love flax, just remember if you are new to using flax it can be very moving in that amount. if you add 1T or cream or sour cream to that recipe and 1/4 c water you can make pancakes out of it too.

I eat a muffin every morning. I have been using 1 tbsp of canola oil instead of butter. One morning I have it with a slice of cheese and low carb jam. the next day, I have it with almond buttrer. Last time, I was on LC, I ate an Atkins bar every morning. The muffin is less expensive and I am sure it is a better nutritional choice. I don't know what I'd eat for breakfast if I didn't have my muffin. Eggs, meat and cheese just don't appeal to me in the morning.

I have bought flax meal a few places in Canada. My local Co-Op store sells it for $4.50 or so and my local pharmacy sells it for $6.50 or thereabouts. I live in a small town so I'm sure the larger grocery stores in the city will have it. Look in the baking or cereal section.

I finally gave this a try. Kind of blah but with butter, cinnamon and Splenda it wasn't bad. I didn't follow the recipe verbatim though, I used vanilla extract instead of cinnamon in the recipe, and 2 pumps of Torani instead of a Splenda packet, thinking to avoid the carbs. I will try it exactly as written next time.

Made one tonight - I am stuffed!! I had mine with cream cheese.
The jury is out on how I feel about them. I think I am ambivalent about them cause I am not crazy about bread in the first place. I will have them again - maybe for breakfast tomorrow as a change of pace. |

I Love experimenting with mine.. esp adding cocoa, using almond flour, cake spice, torani SF flavoring, I have 4 different flavors. Ive added hazelnuts, etc. Not all can be used during induction... but all are so good. Ive done the garlic and oregano for dinner, and used as a bun for hamburgers... little crumbly but awesome. I get about 3 slices depending on which coffee cup I use... love to add creamcheese on top that has splenda & a flavoring added to it... sweet sweet!
I use my SF soynut butter on top sometimes. baked with SF Ragu & cheese on top. Strawberries (crushed) & creamcheese IF I use all almond flour, I can make some taste like a sweet muffin, but adding almond flavoring and splenda etc. I need to get some blueberries and try to make a muffin.. awesome!

I love the muffin! I've so much enjoyed having it as my breakfast and then later in the day as a 3:00 snack. That may be too much though...but the flax/fiber is so good for keeping me regular...
My weight is coming off sooo slowly...maybe 0.2 pounds a day or so. But if I can eat this and lose that is very cool with me. After all the Kimkins stuff...I'm more concerned about losing slowly now than ever... |

Becky, 0.2 pounds a day is almost a pound and a half a week! That is a FABULOUS rate of loss. I personally would be thrilled to achieve it! I don't weigh daily because then I get nutty, but if I were reliably seeing 0.2 lb down daily I'd be very pleased.
