My weight is coming off sooo slowly...maybe 0.2 pounds a day or so. But if I can eat this and lose that is very cool with me. After all the Kimkins stuff...I'm more concerned about losing slowly now than ever...
Whilst this magic muffin is a great brekkie/ snack, maybe 2 a day is too much?? Both the flax meal and almond meal are good for you, but they are very calorically (sp?) dense.

Gotta watch my sneezes after I eat one of these, could be dangerous to those around me

I skimmed these posts, but to punch up the nutrition and moistness, I add 1 TBS coconut oil in the batter beore I nuke. Am not on induction, so I add a few berries, nuts and unswetened coconut. Very satisfying. And the cinnamon helps metabolize sugar.

Hi guys, I have two questions. Maybe I missed it (thread is long) but what was the NET carb count for the muffins--original recipe? I saw the total without fiber--it was really high.

Secondly, --I can't remember the second one--I'm so excited of the possiblity of pancakes and pizza crust I could scream!

BTW, I get golden flax seeds for $1.99 a pound from a local international store--much better than brown--and grind it myself.

Im also wanting to make pancakes out of this batter tomorrow!! YUM! Ill let you all know how they turn out. woohooo

Two might be a lot if you are not used to that much fiber. I was reading about flax and one site recommended starting at 1 TB per day and moving up from there. I'm jumping right in with 1 muffin (whichs is about 3 TB) per day. We'll see how today goes

I was thinking that the muffin is a tad dry. Not too bad drinking it with my coffee, but without the cream cheese on top, I might be choking LOL exaggerating of course I have to say, it is a nice alternative for breakfast instead of the usual boiled egg or string cheese.

Sort of confused on this too? The carb count and fiber seems to make that part a wash. But once you add the egg, baking powder, sweetener & cinnamon- it adds up. One recipe says 1.5 g. carb per muffin but my fitday is adding up to 4 net grams? egg = 1, sweetener = 1, baking powder = 1, cinnamon = 2 Am I adding it up wrong? The flax is 6 but w/ 6 g. fiber.

My OneMinuteMuffins are never dry-maybe you should try increasing your fat whichever you use-butter or CO. Also when done nuking it should look a little shiny & wet on top-you may also be overnuking-sometimes mine only take 45 secs.

Well, 1.5 or even 4 is better than the 11 I first read! Guess I could do my own math work but I'm SOOOO lazy these days

I have made these using NO butter or oil at all. The flax in itself is very good and fatty, you dont need to add oil. I hadn't made muffins in a long time but I plan to today cuz of this thread. I bake mine in the oven using a muffin pan w/ paper muffin cups.

I'm going to try the oven method as well - but have to say I like the convenience of 1 minute in the nuker - easy to do before work

How long do these keep?

Does anyone have the complete nutritional info for this so I can enter it into fit day?

If this has been answered already and I missed it, I apologize in advance....

You would need to enter it the way you make it. I make 3 kinds, savory, chocolate (sometimes Chocolate Lava style), & plain w/pumpkin pie spice. Carb count & nutritrion vary for each one.

Actually, I'm looking for the vitamin stats off of the flaxmeal bag. Someone in earlier post was nice enough to give carb/fat/protein - but am looking for the others. My flax doesn't have nutrition label.

Today is my first day with THE MUFFIN - I'm pleasantly surprised at how long it kept me full. I ate around 8:30 and wasn't even starting to get hungry 'til about noon. Definitely an asset to my meal planning

Try the Bob's Redmill site-that's the brand I have and they have nutrition info on there. Sorry I'm at work and don't have the bag here.

I just made these and am enjoying them for breakfast as I'm typing this. They are delicious!! I've tried to find different ways to incorporate flax into my diet for several years now because of the great health benefits from the flax. However, I have found this to be difficult. I used to eat flax sprinkled on my daily lunch salad and got tired of that. Tried several hot cereal recipes using flax but hated the slimey texture--very yucky. I've baked a few batches of the flax muffin recipe and they were ok. But these one minute muffins are wonderful! Thanks again for the recipe!!

I made these today with coconut oil instead of butter and loved the subtle coconut flavor. It's just nice to have alternatives. I can't eat the same thing every day forever

I don't own any coffee cups that can go in the microwave (I have an old set of my grandma's but they have gold rims & would spark) so I've been using an old small mug. So they turn out round like the old Boston brown bread.

So many things to try, a different container, in the oven instead of the microwave, savory, etc.

I made up 5 sets of the dry mix in tiny plastic containers & have them stacked on the microwave. Speed & portability! Whoo-hoo!

My husband suggested doing this too - to make it quicker in the mornings. Though, you might want to store them in the fridge because I believe flaxmeal will spoil on the shelf

I didn't refrigerate because I figure I'll use them within 10 days. If they do spoil I'll report in.
