Hello to all ! I just started my LC journey this week......this is my first time ever to try Atkins and on Day 2 of Induction, I actually feel pretty good ! My starting weight is 213and my goal weight is 135, which I am hoping to see by spring of "08.
Just wanted to let you ALL know you have been a tremendous source of inspiration and challenge to me as I have silently surfed this site for the past few weeks.......it it had not been for you guys, I would not have taken the plunge on my own ! So, many thanks to you all and I look forward to getting to know you all and hearing more of your wonderful success stories ! I will be here to "hold you up" during the slow times and "jump and shout: with you when you lose those pounds.........Together we CAN do it !

Hi guys, I have two questions. Maybe I missed it (thread is long) but what was the NET carb count for the muffins--original recipe? I saw the total without fiber--it was really high.
Secondly, --I can't remember the second one--I'm so excited of the possiblity of pancakes and pizza crust I could scream! ![]() BTW, I get golden flax seeds for $1.99 a pound from a local international store--much better than brown--and grind it myself. |

HMM Adding 1 T of coconut oil to the mix before nuking MIGHT help with the weird consistancy Im getting. Ill try that next time!
Im also wanting to make pancakes out of this batter tomorrow!! YUM! Ill let you all know how they turn out. woohooo |

My OneMinuteMuffins are never dry-maybe you should try increasing your fat whichever you use-butter or CO. Also when done nuking it should look a little shiny & wet on top-you may also be overnuking-sometimes mine only take 45 secs.

I have made these using NO butter or oil at all. The flax in itself is very good and fatty, you dont need to add oil. I hadn't made muffins in a long time but I plan to today cuz of this thread. I bake mine in the oven using a muffin pan w/ paper muffin cups.

You would need to enter it the way you make it. I make 3 kinds, savory, chocolate (sometimes Chocolate Lava style), & plain w/pumpkin pie spice. Carb count & nutritrion vary for each one.

Actually, I'm looking for the vitamin stats off of the flaxmeal bag. Someone in earlier post was nice enough to give carb/fat/protein - but am looking for the others. My flax doesn't have nutrition label.

Today is my first day with THE MUFFIN - I'm pleasantly surprised at how long it kept me full. I ate around 8:30 and wasn't even starting to get hungry 'til about noon. Definitely an asset to my meal planning

I just made these and am enjoying them for breakfast as I'm typing this. They are delicious!! I've tried to find different ways to incorporate flax into my diet for several years now because of the great health benefits from the flax. However, I have found this to be difficult. I used to eat flax sprinkled on my daily lunch salad and got tired of that. Tried several hot cereal recipes using flax but hated the slimey texture--very yucky. I've baked a few batches of the flax muffin recipe and they were ok. But these one minute muffins are wonderful! Thanks again for the recipe!!

I made these today with coconut oil instead of butter and loved the subtle coconut flavor. It's just nice to have alternatives. I can't eat the same thing every day forever
![]() I don't own any coffee cups that can go in the microwave (I have an old set of my grandma's but they have gold rims & would spark) so I've been using an old small mug. So they turn out round like the old Boston brown bread. So many things to try, a different container, in the oven instead of the microwave, savory, etc. I made up 5 sets of the dry mix in tiny plastic containers & have them stacked on the microwave. Speed & portability! Whoo-hoo! |
