I have never noticed an eggy taste but one thing that I do that is a little different than the original recipe is to add a little vanilla to it. I have yet to make them the savory way...can't get past the nice sweetness of them (cinnamon helps with that, too). But yeah...add some vanilla -- about 1/2 tsp.

Really, too dry? Before or after it's cooked. I'm surprised you have no egg taste or smell. I wonder what I'm doing wrong.
I used the normal recipe, but used almond flour and added Dacvinci's banana sf syrup. Maybe I'll use some vanilla too and see if that helps. |

The original recipe uses flaxseed meal. Can you use that? I don't know how they come out with almond flour since I've never used it...
You could still flavor it with your banana stuff... |

Yes, Lisabinil...I've used coconut oil before too. Sometimes, I use Smart Balance. When I made them with pumpkin, I didn't use any fat and they still came out delicious (I actually forgot to add the fat). I've forgotten the cinnamon before, too, and they taste good and vanilla-ie.

I made them both ways. I saw a post here sometime ago with the almond flour. I think I need to cook them in less time, it looked like it had moisture in it, so I microwaved it for another 25 sec.
I'll taste the flaxseed one I made and see how that came out. Thanks! |

Okay, I just ate a slice of the flaxseed muffin I made this morning, after it was in the refrigerator for an hour and it was really good! No egg taste or smell.

That's one thing I've noticed the recipes copied aren't adding from the original-they need to still look a little shiny & wet when you take them out of the microwave and not look dry. The OneMinuteMuffin recipe sees a resurgance with newbies about every 2 months.

I think alot of people melt the butter in the mug and then mix in the egg first...and other wet ingredients...then add the dry. I need to experiment w/ these again...my first attempts were not so good. I got banana davincis and lemon just for this purpose...maybe tomorrow morning. |

Hi, to the boards, I'm a lurker!
I am eating a LOT of these muffins and I find that if I pop the muffin out of the mug or bowl when it is done and turn it over and put it in for a few more seconds then it finishes up the wet underside. I also toast them sometimes. Sabby |

OK, I have read thru most of this thread...maybe I'm a little crazy and just can't remember. But is this for sure ok to have on induction? I am having trouble and I don't want to make a mistake. I also noticed in the DANDR that he says to have 1 tbsp. of flaxseed or psyllium husks for fiber. Since these are flaxseed meal, they are already ground. Geeze, I am really getting technical, aren't I?
But seriously...if anyone reads this this morning, please respond. I haven't eaten yet because I'm trying so hard to be careful. And I kind of want one of these instead of my usual bacon and eggs. But I don't want to break the rules.Thank you!

I have always used egg substitute in my OMM's- no egg taste. Got real eggs now (had a ton of egg sub to get through 1st!), so will see. We used banana extract in one batch- not enough to flavor like I wanted. Does the DaVinci's make it taste like banana bread? I also use almond meal.

Ok, finally tried it, WOW!
I did this one3tbls almond flour 4.5 carbs 1 tbls Jay Robb Vanilla whey PPowder less than 1 carb 1/2 tsp baking powder less then 1 2 tbls canola oil o carbs 1/2 tsp vanilla, ?? 1 lg egg 1 carb total carbs 6.1, plus used it for pancake with 2 carbs smuckers sf syrup YUM! And I am stuffed! Thanks for the recipes, keep the different ideas on flavorings coming!!!! |
