Chocolate Lava Muffin
up to 1 tbl butter or CO
1/4 c flaxmeal
1/2 tsp baking powder
1 tbl cocoa powder (I use WonderSlim WonderCocoa-1 net carb per tbl)
1 egg
1 square of 85% Lindt Dark Chocolate
Sweetener of choice such as sf syrups, Splenda etc

Melt your butter or CO in large coffee mug. Add flaxmeal, baking powder,cocoa powder, egg and sweetener of choice (I use a combo of sf Chocolate Macadamia Nut Syrup & Splenda Quickpack to taste). Taste and see if you like it. I then float the square of Lindt Chocolate in the middle of the mix and press down just a bit. Nuke for 1 minute-when done the top should be shiny and wet looking not dryish-adjust your time as needed. Immediately turn out of mug and clean-the flax will harden as it cools and be hard to clean. I eat it with plain cream cheese-I like the tang with the chocolate flavor and the gooey melted Lindt.

You are a sweetheart! I have everything...do I dare? hahaha I'm only in the 4th rung of the ladder -- berry week! But I am still not totally feeling back 100% yet, plus, I HAD to take DH to the hospital this morning for an endoscopy. All I've had today is a bar (yeah, didn't want him to smell my bacon cooking), and then, we went to Cracker Barrel afterwards (I talked him into it) because I don't feel like waiting on anybody yet...but I am still hungry. My tea is brewing at the moment...what to do. Do you think it would hurt me to have one or should I just make it with cocoa and leave out the chocolate? I don't want to cheat

Quick bachelor tip for a chocolate 1 min muffin! Just do the standard recipe, leave out the Splenda, and dump in 1 packet of sugar free hot chocolate mix! How easy is that! Mmm boy!

I'm going to answer my own question. Looks like I will be having cocoa only...however, I just MAY make something to frost it with I may treat myself to an actual Lava Cake on Christmas. I'll be fine.

And again, I really thank you for posting the recipe. I searched but couldn't find it without bringing up 10,000 links!

Hi all

I need to put the counts and amounts in my fitday for this 1 minute muffin which by the way is wonderful!!!

I have tried it several different ways but I have finally perfected it where I can eat it and love it.

I use:

1/4 of flax meal
1/2 tsp of baking powder
1 pk of splenda
1 to 1 1/2 tsp of coco powder
1 egg
1 tsp of coconut oil

What do I need to put in my fitday to count this?

Do the counts for each ingredient and list them that way or add up all the counts and make it a custom food.

Tried this for the 1st time today. 1st one didn't work because the cup was too small and it went over. I switched to a large mug and it's so 'bread-y' in texture if not taste - I can tell it's flax, but it's worth it. I can't wait to play w/ the seasonings and uses for this muffin.
OK - the best possible review - my DS just stole 1/2 my muffin. LOL.

Glad you like the muffin! They are awesome. I think I'm going to make a grilled cheese with one tomorrow. Haven't done that one yet!

I tried the muffin in a Glad Ware soup/salad 3 cup container. It makes a long, thick "slice" of bread, which I sliced in two and then toasted in the toaster oven. It seems to get really fishy tasting when toasted. Has anyone else noticed this phenomenon?

Made the Chocolate muffin this morning in very large souplike mug, added cream cheese mixed with vanilla SF syrup to the top.......I couldn't eat the whole thing. What's up with that? I'm not hungry this morning............

Shoot ... I've been all excited about these muffins and flax in general the past couple of weeks, then last night learned/was reminded that flax is a goitrogen ... as someone with thyroid disease I shouldn't be eating it on any kind of regular basis. Guess I'll limit the muffin to maybe a once-a-week treat. Sigh! Have to remember I lived my life perfectly happily without it until very recently!

Could it be the plastic container? Sometimes they can leave a taste on some foods that are cooked in them. The toaster may have brought out the taste a little more. Or it could be the flax...

I understand that almond flour can be used instead.

I also have thyroid problems and to help with that, I've found a 1/4 cup is 4 tbsps so I use 1 tbsp flax, 2 tbsp almond flour and I also use 1 tbsp low carb flour, but it has a small amount of soy flour, which is also not good for the thyroid. Anyway I like the combination.

Thanks -- I recently bought some almond flour, so I'm going to try it (also found another recipe for almond flour muffins). Of course almonds are on some versions of the no-no list too, but I can't bring myself to give them up (or peanuts!). Happened to see my doctor today, though, and her view is that it's about moderation with those foods, not abstinence.

Almonds are lowcarb and contain heart healthy fats-what list are you talking about?

I'm not sure ... I'm not sure I'd regard the seed in the muffin as exactly "cooked" by nuking it, anyway; isn't it mostly the egg and baking powder making it take muffin form?

Think I'll stay on the safe side and keep it limited.

Okay Prairieproof, I'm gonna make your day! You can make this muffin also with protein powder (whey is fine) and almond or other nut meal (brazil nuts are great).

Another alternative that is really quick is a pancake:
1/4 cup yogurt
1 egg
1 scoop protein powder (I like Walker Diet Banana)
1 pinch of baking SODA
splurp of Da Vinci syrup of your choice, or splash of vanilla
optional chopped nuts
optional chia seeds (aka salba)

Fry in coconut oil--very thyroid friendly. Spash on some more Da Vinci syrup and butter.

I don't have a microwave so I make pancakes. I don't do so well with flax because it's estrogenic, inflammatory, and mucus forming. If you omit yogurt, then use a pinch of baking powder instead.

I made a new one today -- instead of the Lava Muffin that Lisa gave me (thank you again, Lisa), I made one instead by putting a tablespoon of cocoa into the muffin, and I made some little mini-muffin sized coconut bark yesterday -- well, I took one of those and stuck it down in the muffin and it was nice. I think I will put 3 of them in there next time! I am still a little too scared to have the Lindt chocolate. But it worked!

I don't use the flax. I make the OMM with 3TBL almond meal and 1TBL plain whey protein powder. The rest of the recipe remains the same from the original post (1/2 tsp baking powder, 1 egg, 2-3tsp butter, seasoning/spice to taste depending on whether or not you are making it savory or sweet).

Works like a charm!!
