Thanks dBunny and Jo, I have the liquid and the powder. I haven;t tried the powder yet but for my coffee and tea I use the liquid. I normally had been putting 2 splenda in my tea. Well, the back of the bottle of liquid says I should need about 8 drops to equal that. I need about 14 drops to equal the same sweetness. I like it and it is not bitter at all but now I'm not sure how much to actually add of this stuff and I have no idea for the powder at all. I just don't want DH to go EEWWWW cause I am SO happy to have him eating these for b-fast now. He does not eat LC and it is so great to send him with something healthy in the AM instead of a biscuit w/turkey bacon, egg and cheese everyday.

Making your own almond flour/meal couldn't be simpler, and wayyyyy cheaper than the store bought brand.
I use a coffee bean grinder - cost less than $9- that I use just for my flax seeds and nuts. Buy whole raw, unsalted, untoasted almonds, no need to get the skinless kind, as the skin adds more fiber. Just pulse or process in a mini food processor or coffee grinder, go easy because if you process too much you will wind up with almond butter. I would say the consistency you will get will be like a fine dry bread crumb. Store in the fridge, it has a very long shelf life there. Dunno what more to add, it really is that simple!!

I just tried the grilled cheese & OMG!!! I used 2 slices of Kraft Deluxe American cheese and I'm in love.
I used a square plastic container, cut the bread in 1/2 after nuking for 1 min. and then cooked it in a buttered skillet like a normal grilled cheese sandwich. I followed the original OMM recipe but left out the cinnamon. Thanks to whoever suggested this variation! |

Okay, I experimented tonight. I used 1/2 flaxmeal and 1/2 coconut flour and a touch of coconut flavoring. I had to add some extra water (the coconut flour gets thick quickly), but it seems to have microwaved nicely. I put it on a sandwich plate and pressed it down so it would cover the whole plate. I topped it with a tbs of toasted pecans, too. Tomorrow for breakfast at work I'm going to try toasting it. Today, I took a leftover flaxmeal "pizza" crust and toasted it in toaster over, just so it was light brown. After it cooled it got nice and crunchy like a cracker. I then topped it with cheddar jalapeno cheese spread and melted it in the microwave for 30 seconds. Oh.....my......god! It could not have been tastier. I'm loving flaxmeal more and more everyday!

I will be trying the flax pizza crust really soon I think..mmm.
Today I made a coconut muffin: 1/4 c. flax meal 1/2 t. baking powder 1/2 pkt. splenda splash of vanilla sf davinci's 1 egg 1 TB unsweetened coconut 1 TB coconut oil with a small pat of butter added in as well. Nuked 70 seconds; topped with cream cheese. Love those little chewy coconut bits in there ![]() |

Oh, I also have been using the coconut in the muffins. Aren't they delicious?!
I've even put blueberries in them, along w/coconut, and they are getting yummier all the time. |

Bob's Red Mill low carb flour does make a nice texture, not quite so spongy. The low carb flour has per 1/4 cup serving 6 net carbs and is 3% soy flour so I use half that amount (I try to keep my soy intake down) along with a tbsp of flaxmeal and a tbsp of almond fluor.
I will continue to use it. |

AnneSD--I used 2 TBS of pumpkin and nuked for about 2 minutes. It still was pretty moist so I may nuke it a little longer next time.

Last night I made myself a regular 1-minute muffin, my son who is 19 said what are you eating, I told him. He wanted one, I said I don't know if you will like it, he said I want one, so I showed him how to make them (I put two packets of splenda in his muffin) he loved it. He said this would also be good with some banana and nuts creamed into it so it would taste like banana nut bread.
I can see right now I'm going to have to keep plenty flax meal on hand. Vikki |

I tried the silicone muffin things I have and made the omm with 1 tsp of CO instead of butter and I thought they looked pretty good so I figured I'd share a picture

I'm not sure - but looks like there may be a difference between flax oil and flax seed? It looks a little conflicting.
