javajive ... I highly recommend Rose Elliott The Vegetarian Low-Carb Diet if you are thinking of going vegetarian. I have to admit I have not tried many of the recipes - I have done well just altering what I find here on LCF for use with vegetarian proteins - especially Linda Sue's amazing recipes, here: Linda's Low Carb Menus & Recipes - Home

One caveat about the book .. lol! That's my story on page 16 under a pseudonym I chose, and I'm quoted elsewhere in there too.

If you read the "diet" section you will see it is pretty much a version of Atkins - it is similiar to what I've done.

Pauline...I actually bought that book some time ago, but it's away in storage. It is actually a terrific book. My thought was I'd put it aside until I actually made the decision to go veggie (warped logic, I know). Now I have to dig it out of storage somewhere and read that page 16!

Yes, I am definitely going veggie. It's time for the commitment. I have pondered it for so long, now it's time for action.

Hi Pauline,

Just wanted to bump this up~

I am making a veggie dinner tonight..
Patrick and I decided to try to implement an entirely veggie day (or two) in each week.

I am working on a good eggplant parm recipe right now. I could just eat sliced fried eggplant (dipped in egg/cream and dredged in good fresh grated parm first!) all day but a half an eggplant has 13 net carbs so I have to be careful.

So far I am not having any issues keeping the carbs around 25 or 30 a day, still not losing BUT not gaining! I don't care, I am enjoying my food SO MUCH more!

I still want to talk more about veggie menus when you have time.

I will pm you Cary But I imagine your weight stabilization has more to do with adding beans than it does doing vegetarian per se. If you pm me a sample menu, maybe I could give you some ideas! or start a vegetarian lc thread here on Main Board, if you want lots of opinions! lol!

I ate a lot of eggplant during my weightloss phase ...

I lved reading this story! I'm really proud of you, Pauline. You mention that you gave up caffeine when you originally started induction. My questions are, why and are you still caffeine free? I love coffee and I look forward to it but I feel like I want to try to remove it completely. I don't like the crash that it causes and I don't like feeling like I "need" it. Did you feel better when you stopped drinking coffee?

Hey GS .. I am NOT a poster child for the coffee thing. I gave it up 4 times in my life - when I was pregnant with each of my children, once when the doctor made me give it up, and when I started Atkins. I am absolutely back on the drug -- and I didn't feel better, but worse when I was off of it ... but this is an addict speaking here.

What giving it up does do for me is lessen pms symptoms (water weight and achiness) .. if you want good advice on the caffeine thing, I recommend taking it to the main board and seeing what response you get ... I am a bad bad tada!

p.s. should be easier to give up in the Tragic Kingdom

Thank you so much for sharing your story. It is truely inspirational and written so elequantly (sp?). Have you thought about turning it into a book? The way you write is beautiful, moving, haunting and joyous. The raw emotions have left tears in my eyes because I know exactly you felt - we all probably do.

Did I ever comment on how INCREDIBLY and RIDICULOUSLY AMAZING your transformation is and continues to be? No.. don't think I commented yet.

It's people like you Pauline that keep people like me going! I don't want to be the one who fails, I want to be one of the ones who lost the weight and kept it off. So when you see me pop my head in the boards 5 years from now, I'll still be at goal, just like you.

Because of your kind post fembomb, I went and looked back at the photos I posted in this thread (I should have posted some of me as a child -- will have to get some from my mother) ...

But the photo of me with the red-haired one year old ..... she is nine now and has asked to run a road race this morning (one that my dh likes to do every year, typically one of us runs and the other minds the kids) ... so I will be pacing her in a road race this morning in a couple of hours ... hard to believe that woman sitting on the bed would even consider doing that, lol! How many missed opportunities I would have had, had I not lost this weight ...
