The Low Carb Vegetarian by Rose Elliott
This book is amazing.
It's totally Atkins, done vegetarian style. So much for those pooh poohing vegetarians doing low carb. Rose Elliott is a cookbook writer, popular in England, with over 50 vegetarian cookbooks under her belt. I got this book the other day and was very impressed with her friendly style of writing and terrific recipes. Plus the testimony of those doing Atkins, vegetarian style was inspiring. So, it's out there for those who prefer meatless eating. Everything from breakfasts to snacks to desserts. |

That sounds great! Suprisingly, there is a modest amount of Veggie LowCarb books out there. Of course, I'd never thought once I became a vegetarian, that I would want to try to go back to a low carb diet. But, all the pasta, bread, and rice that I was consuming, made me get fatter and fatter. So, I had no choice but to consider cutting out the starch, even though I stopped eating meat.
I now find out that I can be on a lowcarb diet without neccessarily eating real meat. I can always use soy and veggie products. There's also tofu, TVP, black soy beans (which are super low carb). Eggs, all types of cheeses from cottage cheese to cheddar to havarti.
If you like to bake there are a ton of high protein low carb recipes out there using flax meal, nut meals, coconut flour, whey, etc. For snacks, nuts, low carb beverages, low carb bread, etc. Where there's a will there's a way. |

Moonlight Angel, I have flirted with vegetarianism on and off for years. When I was vegetarian I thought for sure I'd lose weight, but I too gained from all the pasta, bread and grains!
I read a lot and realized that you can be a vegetarian and still keep the carbs down. One good book to read is Life Without Bread. This really taught me the importance of animal protein for superior health, but you don't have to get it from meat. Dairy and eggs are animal proteins as well, and soy is considered a complete protein. And the plan in his book is more of a moderate low carb approach and very easy for a vegetarian to stick to. When I went vegan I truly felt awful. I do believe we need some form of animal protein for best health. Practically all the low carb meat recipes I've seen can be converted to meatless, by subsitituting low carb meat substitutes (Morningstar Farms Grillers Veggie Grounds) come to mind, and by leaving out the salt in the recipe since meat subs contain added salt. |

Dr Atkins never pooh poohed the vegetarian lifestyle. He just said induction is practically impossible for anyone to follow since you're only allowed 20 net grams and by being vegetarian, you would simple 1) be very hungry and 2) be very limited in your choices. He said there was a way to do it, but you have to start off in the OWL stage and up your carb counts to 30-40 net carbs to start.

i'd worry about all the soy affecting the thyoid, as it is know to interfer/block thyroid hormones, especially if you hypothyroid and already taking medication for it

I have been doing Atkins as a veg (with the very occasional fish added in) since 2003 including induction very successfully. I have been a veg + fish for almost 30 years .... Rose Elliott uses my story on page 6 and pages 16-17
I have just read the book and found it very good. The plan she describes (she came up with herself) is pretty much what I have done in converting Atkins to lacto-ovo veg and the recipes and menu suggestions are AMAZING!! Including vegan options. I also recommend Low-Carb Vegetarian by Margo DeMello for wonderful recipes!

I purchased Rose Elliot's book in September but due to family commitments have not been able to start until now. So, as you might imagine, my anticipation level is at an all-time-high and I can't wait to embark upon my healthy eating/healthy body quest!
One thing to note: My father was recently diagnosed with Alzheimer's Disease (AD) and I have been doing a great deal of research into the disease. I've been looking at cause and effect, environmental factors, genetics... the gambit. In pouring over scholarly med journals (such as JAMA, Harvard Med Journal, and The Lancet) I came across a link between soy and AD. The danger is not so much with the natural product, but with the way it's processed/preserved. In many instances, soy, in the form of Tofu, for instance, is processed using formaldahye (the chemical used in post-mortem embalming). It is this chemical that poses the AD risk, apparently. This risk is missing in other soy products, such as Tempeh varieties (fermented soy protein cake). And there is evidence that Tempeh, along with Seitan, a very high-protein, low-carb product made from wheat-gluten (which may also be made at home), may actually protect against AD. These studies have been sociological, mostly looking at populations with a low-incidence of AD, where these foods were consumed regularly. Now, this is much-disputed as you will no doubt guess, by the soy-producing industries and the companies who use their products in foods sold to consumers. My suggestion is to use your own best judgement. Know what you're buying. Seek out the best quality, freshest, most naturally-processed soy products that you can buy. Soy/Tofu doesn't need to be processed with formaldahyde, this is just a cheapest way to preseve it. I'll keep posting my weight-loss progress in here as I go forth with the Elliot diet. I'm hoping to lose 30-40 lbs. before I have to have my driver's license renewed in March. There are some real concerns with ingesting GMO-soy products and for some who have soy allergies or who take thyroid medication, but for the most part, ORGANIC soy is a wonderful, healthful food, perfect for meat subs for the LC vegetarian. Susan, other non-soy protein options for vegetarians are: nuts, seitan ("wheat meat"), quorn, milk and eggs (if you go lacto-ovo). All that said, I have been eating vegetarian for about 30 years - 5 of those on lowcarb - and eating soy the entire time. My doctor tells me that the issue - for your normal average joe (not those with pre-existing thyroid, etc issues) is with the soy supplements and that eating soy in the form of beans, tofu, veggie burgers is not going to make a measurable difference. hth! |

After flipping through The whole Soy Story by Kaayla Daniel, I only recommend miso and tempeh. Perhaps the best known of the soy toxins are the protease inhibitors (also referred to as trypsin inhibitors) which, as the name suggests, are able to inhibit the action of proteases (including trypsin) which are enzymes that are involved in the process of dismantling proteins for use by the body.

For those with pre existing conditions, most of us dont know we have them because those idiot docs out there dont know how to test for it never mind treat it! If you're struggling to lose wt, i'd avoid soy. |

FYI - I GAINED over 200 lbs on a STRICT vegetarian diet (at times I was a vegan). I was an animal right activist and didn't believe in eating meat. I led this lifestyle for over 16 years as did my son (who didn't eat meat til he was 10). We all suffer from insulin resistance and the high carbs and soy was terrible on my body!
