I started reading this thread before dinner tonight and started craving a salad so much that I ran out and bought some lettuce. Made a yummy salad for dinner w/ a combo of romaine & iceberg, bacon, diced ham, boiled eggs, sunflower seeds, olives, feta, and Marie's Cesar dressing. Best salad I've had in a while! |

I made an Israeli-style salad today: small cubes of
Cucumber Tomato Radish Red pepper Green onion And a whole bunch of parsley, chopped fine. Dressed with olive oil, lime juice, salt and pepper. If I had any fresh mint I would have added it, but it's still good without ![]() I made a big batch and will mix a dose of it up with some shredded lettuce each time I eat it over the next few days. |

I agree.....All Hail to the Great Salads Bowl! I was thinking about this just a little while ago while eating my salad. It certainly is a 'sandwich' without the bread. I even like to stuff some salad into larger lettuce leaves and dip that into dressing.
Almost every day, I do not mind having either a Greek (with chicken) or antipasto salad with Greek or olive oil/ red vine vinegar dressings. It's one of my favorite meals. One of the best salads I have ever eaten was a salad from a French bistro. It had cold spring greens, hot string beans, pine nuts and mini squashes and heirloom grape tomatoes (all hot). Then they added fresh roasted chicken breast and goat cheese (which got all melty in the hot vegetables). Then they gave you a balsamic dressing on the side. Delicious beyond words. The textures were hot/ cold--crunchy veggie/ soft veggie---and nutty savory/ herbs d' provence. Unfortunately, Jacques... the owner of this bistro retired and then passed away not long after. The people who bought his restaurant could NOT recreate his food to save their life. His wife, used to make up 'meat & cheese' boxes that were not on the menu for us LC'ers. For $5 in a styrofoam box she arranged an assortment of roast chicken or turkey, salami's, or pork tenderloin slice and small hunks of brie, gouda and goat cheese plus some garnish & little cornichons. But their salad ROCKED.

I just discovered butter lettuce. Yum! I also like romaine, spring mix, and spinich. I'm not a big fan of iceberg. I ordered a foodsaver with a wide mouth lid. I can't wait to make salad in a jar (it can keep salad up to ten days -not that it will sit that long).

So many great salad ideas! I love to put into a salad the ingredients that I would ordinarily like on a pizza:
black olives chunks of mozzarella pepperoni pieces mushrooms etc. |

I like a salad with onion, avocado, radish, cucumber, romaine lettuce, shredded cheddar cheese, green onion, celery and topped with wish bone blue cheese dressing which according to my bottle has 1 carb per 2 tablespoons. Yum

handy salads
My salad starter is usually tuna, chicken, or turkey - may be canned or packaged, mixed with chopped celery and HB egg, then some mayo. It may get stuffed into red or yellow pepper "boats" or added to romaine lettuce. If I can afford the carbs, I melt some cheese on a LC tortilla, toss on some shredded romaine and the meat mix, and enjoy!

The original Green Goddess--look for recipes with tarragon and anchovies--is one of my favorites ever. Google the KitchenDaily recipe for Green Goddess Salad.

Made my first vinaigrette tonight, with fresh basil from a friend's garden. Grapeseed oil, a tablespoon each of unseasoned rice vinegar and apple cider vinegar, couple of handfuls of basil ground up with my mortar and pestle, two large gloves of garlic crushed, squeeze or two of fresh lime, fresh ground pepper and a pinch of this smoky African seasoning blend I found somewhere (smoked paprika, salt, garlic, basil) |

This is the very best salad thread on this site imho! (you won't be able to see it if you are new and haven't been here long or if you haven't written many posts yet as it is from the Playground board).
http://www.lowcarbfriends.com/bbs/be...ite-salad.html Enjoy! (warning: They are not all low carb, but most could be made so with a little imagination) Last edited by heidihoopi; 07-16-2012 at 10:11 PM.. |

Now I'm upset again. I knew I wasn't getting my notices of posting to another favorite board. I started this one way back when.
A bowl of salad is literally what saved my life. Now I'll have to remember to look for posting. I wonder why my subscriptions isn't working. dew |

I just discovered butter leaf lettuce! I always knew about it but had never tried it. I have a 'thing' about textures, and this lettuce is most pleasing! In fact, I need a salad NOW!!
*grills chicken* edits to add: I regret that I do not have cucumbers today. Boo. ![]() Last edited by August Moon; 08-17-2012 at 10:40 PM.. |

![]() One "salad" that I grew up with is to take cucumbers, slice them about 1/4 inch, add a few very thin slices of onion, cover with water and add vinegar to taste. Season with salt and pepper. It makes a kind of fresh pickle - very tasty and refreshing. It keeps in the refrigerator perfectly - it's actually better on the second (or third) day. I haven't had it in awhile - I better make some today! ![]() |

I made Caesar dressing this week using sour cream, mayo, anchovies, grated Parmesan, an egg yolk, fresh garlic, salt, and pepper whizzed in a food processor. Then I poured it over shredded romaine, mixed baby greens, sweet onion, fresh tomato, and avocado.

Bumping
I thought I should bump this to get some more salad ideas. A bowl of salad did save my life.
I still think it's the quickest and most interesting LC meal. What's your best salad or newest additions? dew ![]() |
