Im 31, fat , tired, and sad, I need a buddy!!!!!
Ok Heres a real brief history of me and my weight gain history.
I was always thin, growing up even though in high school....retarded as I was at a height of 5'5 and 115-118 I thought I was fat ....then ![]() Now Im out of school, meet my hubby, we have our first baby, this is where I start gaining. I never quite lose all that before Im pregnant again. Mind you I didnt have to do a thing to stay thin before this. Then ...further down the road up to now I also have 2 other children, I never lost any baby fat, I have actually gained since child birth. BUT........... news from my new doc after finally getting so dang tired of struggling on my own...I asked for ....something anything to help. A blood test later I find out I have good blood sugar levels, but very high insulin...a precurser for diabetes. So, now Im on a med to fight that, along with (doc recommended even!!) Low carb....Theres something to that fact that hes ok'd it. I know im sticking to this. But, help and a motivater would be awesome. Im officially starting my sw/250 UGW/150 100 pounds its so hard to even think about, or visualize. As long as Ive been fat now Im still not use to it. Anyway , now im rambling.

Can I join you? I could sure use accountability with buddies and doing a daily posted menu. I a few years back lost over 80 lbs but I have about 40 to relose.
I get overwhelmed trying to do the challenge threads and am looking for a small group to compare notes with and cheer on. I'm 37, a married mom of two and a diabetic with pcos. I'm supposed to be on metformin but I sheepishly admit I quit taking it. I really need to stick to LC. I'm sick of being fat. I cheated today~ not good! Thats where I think accountabilty buddys would sure help. Pretty please (smile)

I'd love to hang out with this little troupe. I almost the same stats and goals as you 2bsmall, im 30 from Australia. I have low-carbed in the past and lost a good deal of weight then i started shift work and yadda, yadda, yadda now im starting over. Im almost 3 weeks in but sticking to induction level carbs for a bit longer. Today i have the starting signs of the flu and ate a few too many macadamia nuts.. *sigh* the stick is still pink so hopefully i haven't knocked myself out of ketosis...
I have to cook for others as well, i usually just add some pasta, bread or rice to the plate for those not low carbing and serve them the same things i eat. My favourite recipe is steamed cauliflower with chopped chicken and bacon, with a sauce of cream and a little garlic. It's yummy, does not taste anything like diet food! Serve pasta instead of cauliflower for everyone else. I also love cream jello. Good for induction, substitute a quarter to half the needed water for cream, i use the lower fat thickened cream as i find it wont separate. It turns jelly into a more pudding like treat. Adding a little vanilla flavour to a cherry jello and cream is great as is using a spoon of cocoa with cream and orange jello. Chocolate orange pudding! yummy! I also have a recipe for a flourless chocolate brownie, it's amazing the texture is perfect! I just need to adjust the sweetenings and flavourings, will post that too once i perfect it. I really love adapting recipes and creating my own low carb things. Frankenfoods scare me! Last edited by orlyon : 08-17-2007 at 03:30 AM. |

Hi everyone~! It's a new day so lets do it!!! Orylon~ Oh do share the brownie recipe. Yum!
My favorite LC recipe is mock potato soup. However I rarely eat it as no one else will eat it. I'll dig out the recipe and post it tonight. Also any type of omlette is great. Do you all mind if I post a daily menu for the accountability? If weall post menus we may get new ideas from each other! Have a great day! |

Heres the original...
* 50g (1/2 cup) cocoa powder (about 1.75 ounces) * 80ml (1/3 cup) hot water (about 2.7 fluid ounces) * 2 tsp instant coffee powder * 2 tsp boiling water * 1 x 100g pkt almond meal (3 and 1/2 ounces) * 100g (1/2 cup) caster sugar (i substituted a teaspoon of liquid sweetner that supposed to be equal to half cup of sugar) * 3 eggs, separated Method 1. Preheat oven to 180°C. (or about 350) Brush a square 20cm (or 8inch) (base measurement) cake pan with melted dairy spread to lightly grease. Line the base with non-stick baking paper. 2. Combine the cocoa powder and hot water in a medium bowl. Combine the instant coffee powder and boiling water in a cup. Add the coffee to the cocoa mixture and stir until combined. 3. Add almond meal, sugar and egg yolks to cocoa mixture, and stir until well combined. 4. Use an electric beater to whisk egg whites in a clean, dry bowl until soft peaks form. Use a metal spoon to fold a spoonful of egg whites into cocoa mixture until combined. Gently fold in remaining egg whites until just combined. 5. Pour mixture into prepared pan. Place cake pan in a roasting pan. Pour enough boiling water into the roasting pan to reach two-thirds of the way up the side of the cake pan. Bake in preheated oven for 40 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from oven. Remove cake pan from water bath and set aside for 20 minutes to cool. Turn cake onto a wire rack and remove paper. Set aside for a further 20 minutes or until cooled to room temperature. The texture was spot on for brownies, it doesn't really rise at all and the brownies are perhaps a little on the thin side but served with a dollop of cream and i reckon it's a satisfying serve. Moist and fudgey and came out at 7g carbs per server with 1 gram of fibre so 6 grams net. However, i couldnt taste any sweetness and the coffee was overpowering, the cocoa was also quite bitter. I was worried about moistness so i also added a teaspoon of vegetable oil but it probably wasn't needed. Im going to try it again soon using twice as much liquid sweetener only 1/3 of a cup of cocoa, 1 tsp of coffee and a tsp of vanilla extract. It should also lower the carb count slightly. Subbing straight granular splenda for the sugar could probably solve the issue easily BUT if i can use the liquid it would save tons of carbs! Perhaps you guys might be able to think of some better modifications I love the fact that it doesnt use soy (yuck!) or any of those protein powders so it's cheap to make and non low carbers would probably like it too. |

WOW THOSE sound good! I'll give it a try! I need to get almonds and instant coffee. Yum!!!
I was so tempted to cave today but I thought of this group ond only bought the 3 doughnuts for the kids and bought steak instead of pizza. Pms is really kicking my butt right now! Weight is 4 lbs above ticker.EEKK Mock Potato Soup 1 head cauliflower 1 small onion 3 cups chicken broth 3 slices thick bacon diced 3 slices ham, diced (optional) 3 tablespoons butter 1/2 cup heavy cream salt and pepper to taste shredded cheddar cheese (I used one cup) Separate cauliflower and cut into small pieces. Boil with chopped onion in chicken broth until tender. Place approximately 2 cups of cooked cauliflower in food processor with 1/4 cup of chicken broth. Add butter and cream and pulse until creamy. Combine remainder of cauliflower with cooked bacon (and ham if you're using that as well) salt, pepper and shredded cheddar cheese. Mix with pulsed mixture. Serve with cheese on top. Wifezilla~ nope I haven't. I didn't like them years ago when a friend made them but I sure might now in a good recipe. She mashed them with a of brown sugar on top (eewww)
That sounds really good Love2eat! I love peppers too. What plans or levels are we all on? I'm on PP so 30 grams or less after deducting fiber. I tend to be around 60% + for fat. |

Hello,
I just found this website yesterday, would love to join your group! I just started my diet yesterday. I did it several years back and was very sucessful, but gain it all back and much more. I was told by many that Atkins was not the right way to do it if you wanted to keep weight off,so I tried ww many times and if I was lucky I might lose 5pds in a month, that was with working out and starving myself the whole month,I would get frustrated and give up! So I'am back doing the diet I know will get the weight off! I'am at the heviest I have ever been,I finally weighed myself today,I'am at 175,I'am a bit relived I could of sworn I would be up to at the least 190! I like many of you was skinny all the way till my late 20's early 30's. I stayed around 134 for 10 years and belive or not would not be seen in a bathing suit because I thought I was too fat! If only I could go back in time,I would of been at the pool and the lake having the time of my life instead of trying to hide my body! I went out yesterday and bought all the foods I ate the last time on the diet. But I think I messed up,I use to eat Taco Bell's taco salad w/out the shell and the beans,I forgot yesterday to take the beans off,and found out,I has just ate 43 carbs! Will not make that mistake again! But today is a new day. My menu for today is: eggs and sausage for breakfast hamburger patty and salad for lunch chicken and veggies for dinner and jello and whip cream for desert YUM! I'am looking forward to chatting with Y'all,I sure am going to need a lot of support,I have got to get down to 135 by 2/08,will be going on a cruise and I want to have the body I had when I was in my 20's,this time I will be seen in a bathing suit having the time of my life! ![]() |
