Penpal needed

I have struggled with my weight all of my adult life. I lost some weight a while back only to stop smoking (after 21 years) and gain it all back plus some! I guess I need motivation and inspiration. The will power is out the window, although I have done great today! I love FOOD. Southern cooking. I need to change and I would appreciate some help. I will try and inspire and support others on their journey. It is a struggle and together we can help pull each other along.

Great! How did this week go for you? I have lost 11 pounds! I am excited as I can at least breathe in my clothes again. Any exciting plans for the weekend?

Well here I am again Amazeofgrace!
I was cruising the pen pals and saw you again.
I'll tell you what I'm doing today. First, my husband is going to grill some nice porterhouse steaks, with that some grilled aparagus, and a salad.
Then later on today we're going out to do Karaoke.

That's for today, for tomorrow, just staying home and relaxing.
How about you?

I have to admit that this week-end was the pits for me. We went to a cook out over at a friends house and I had ate a brownie with my coffee that afternoon but at dinner time I also had a bake potato with my steak.
I don't know why I caved in to eating it but I did so today I am trying to make up for it and eat really low carb, so far so good.
I get weak like that at times, I guess we all do but it just makes me feel bad when I do it and then I get all depressed and I don't like feeling that way.
I already have some bad health problems with arthritis so I really need to lose this weight and I have alot to lose to. I want to lose about 75 lbs., That would bring me down to 145 which would be a good weight for me.
Do you all have much to lose or just me?
Today for breakfast I just had one egg scrambled and my coffee, for lunch I made a small salad and drank my green ice tea and for supper tonight I am having grill chicken breast with some steam cabbage.Trying to keep the carbs low today so I can get back on track with my rightful way of eating low carb again.
I am determined to lose this weight even if it takes a life time to lose it all.

Amazeofgrace (love your name)... I'm Meekness and would like to offer some encouragement and support. I could use some as well. I'm doing A LOT better this week...down 6.5lbs I pray I can continue on...

Hi, just checking in while I have a few minutes. Sure looks like you all are doing good with the weight loss. I am doing better than I was but I see my doctor tomorrow so I hope I have lost some so he will not fuss at me again like he usually does about my weight. I have some health problems and I know I need to lose it but its so hard. I am trying though but sure need all of your support.

Meekness, Diana, how are you all doing with the carbs? I got weighed in at my doctors yesterday and I had only lost two pounds in the last two months, that was alittle dissappointing for me because I had been working hard and thought I had lost more. But I am not really surprised either because lately I have not beeen doing much because of my bad knees hurting me.
I know I need to exercise more than I do but its hard when the old knees are so painful. But I promise you I will do better in the future. You all just hang in there with me because I need you.
Why don't we exchange a favorite low carb recipe today. I want to cook something different for a change. I will find one of mine and post for you to...

Here is my recipe for you today, hope you enjoy it.

Broccoli Cheese Soup

Ingredients:
2 cans chicken broth
2 bags frozen chopped broccoli (I like it in real small peices)
3/4 lb American cheese, cut into cubes
salt and pepper

Bring broccoli and broth to boil or until broccoli is sort of tender, simmer 5 minutes, and add American Cheese cubes. Heat on low until cheese melts, add salt and pepper to taste. If soup is too thick, add heavy cream to thin to desired consistency.

Makes 6 servings. Approx 4 net grams of carbohydrate per serving.

"OVEN BAKED CHEESE CRISPS" (Crackers)
INGREDIENTS:
1 cup grated hard cheese (such as Parmesean) - NOT the dried powdery stuff
PREPARATION:
Preheat oven to 350 F.

Note on type of cheese: You can use any kind, really, but the results will be different. Hard cheeses, such as Parmesan, Romano, Asagio, etc, will make a crisp "shell", whereas cheddar will be more chewy and "lacey" (the fat separates out), though still firm. Softer cheeses such as mozzerella will not work well.

Toss cheese with any seasonings you'd like - garlic powder (about half a teaspoon for a cup of cheese), hot pepper powder, even cinnamon. Or leave plain.

Pile 1-4 tablespoons of cheese (depending on the size you want) on a baking sheet covered with a silicone mat or parchment paper oiled on both sides. Flatten the tops so they are in more or less an even pile. There should be at least two inches between smaller mounds, 4 inches between larger ones.

Bake 5-6 minutes until they are a light golden brown (they will be a little darker at the edges). It happens fast, so watch carefully.

If you want to mold them into a shape, you want to "drape" them while still warm. You can make cups over an upturned glass, or "taco shell" shapes by draping over any cylindrical object that is at hand (rolling pin, side of glass, etc.)

If you make them flat like crackers they are great with this soup..
